Forget Texas...come on to Tennessee and join us. No offense Texas. Your cobbler looks just like my wife and I make. I'm sure it's just as delicious. My favorite cobbler is a tie between blackberry and cherry. I used to go blackberry picking in the summer to get enough blackberries to freeze so I could have some in winter, but I got too old to fight the briars and snakes. Ran across a rattlesnake while blackberry picking once and it will definitely make you be VERY careful.

As an American, any cobbler I have made or eaten has a crumble top rather than a full crust, but it isn’t a question of one over the other; just another way of experiencing a cobbler. I think it is a quicker, however, give it a try for comparison. If you are not sure, just google cobbler crumb topping and pick whichever strikes your fancy. So happy you have enjoyed being over here; we love having such nice people and young families to come and visit.❤️

I love whichever fruit is in season for my cobbler! At my old workplace, the town tore up miles of old railroad, and turned it into a paved walking trail that actually went right by the offices. All along a couple miles of the trail were huge blackberry bushes, so after lunch I'd walk the trail, and pick and nibble a handful of fresh ripe blackberries. YUM. There is another version of "cobbler" that is popular in the deep south/southwest (including East Texas). I am aware that in England there are several brands of excellent pre-made pastry sheets so that is relatively easy. Your casserole looks about 9" x 13". Cut pastry slices 12" long by 2" wide x 1/8" thick. You'll need 8 slices. Put 6 to 8 cups of blackberries (or peaches, or blueberries...) in a large pot with 1/2 cup of water and 2 cups icing sugar, stir and bring to a simmer just long enough to bring out some of the juice and melt the sugar, about five minutes. Melt 2 tablespoons cornflour in some of the juice and stir into the fruit. Place half the fruit and juice to the dish, lay on 4 strips of pastry (these will cook in the juice like dumplings) then the rest of the fruit topped by the remaining pastry. If you like, sprinkle cinnamon-sugar over the pastry and dot with butter. Cook at 180 C. until the crust is golden brown and the juices are bubbling!

Same recipe I use, (Oregon/United States) and it's also wonderful with blueberries or peaches (--canned is OK, use the slightly larger size!) Yes on the self rising flour. And yes, ice cream is a must: even in the middle of winter!

My family always made a cobbler like this during the holidays with a mixture of blueberries, blackberries, and raspberries. We made a larger size, but my mom would make it in a cast iron dutch oven. We also would put a bit of ice cream in the blender with just a splash of milk and make the ice cream more of a soft serve consistency.
