Under normal circumstances "hot and boiling' would be redundant. At lower air pressure though this is less redundant.

broccoli sounds good, but i use cauliflower instead. maybe you can use both!!

instantly became one of my favorite side dishes. Your bechamel sauce is perfect as well. I used chicken fat for the roux the last time, instead of butter, just 'cuz I had it; works great :-)

The only reason I'd dump the broccoli on boiling water, is only to kill some embedded bugs... otherwise, crunchy is the word ! BTW, the people who clicked dislike are those who would not eat their green beans when they were kids...... or those guys who like to get the frozen and then mushy stuff at the grocery store !
