@@berniecelee5062 I started cooking when I was 6, corn meal mush or oatmeal for breakfast. I was a latch key kid. Next was pork pot roast. Ma would put a frozen one in a pot of water all seasoned before her and dad left for work. Note said "Bring to boil at 1, turn down to simmer and cook till done. Don't let it run out of water. I'll take care of it when I get home." Soon the notes said "Take a roast out and cook it". I've been cooking and baking since. I have pepper steak stirfry leftovers for today. My steak was in ground 80/20 form, LOL. BBQ chicky .25 tomorrow. .25=leg quarters, I bought 20lbs of frozen yesterday. I only buy frozen fowl, it don't leak and with thawed, you don't know how long it's been thawed. Frozen bird help keep other meats and dairy cold too on the way home riding in a big chest cooler. With 20lbs of chicky I'll restock my supply of dino broth as I parboil the quarters when I fry. An over night brine with the chicky, parboil in stock for 10 min. Let them sit in the stock while I get other things ready for supper like peel potatoes to boil. For BBQ, I'll take the quarters out of the stock and put them on a foil lined pan with about a 1/2 cup of broth. Loosely cover with foil and bake at 325F. When the potatoes are done, uncover and flip the chicken and baste with sauce and back in oven uncovered. Drain and mash potatoes with milk and butter, S&P if You like. Back to that nice smelling chicky. Turn the oven up to Broil and watch it close. When it starts bubbling, take it out, flip and baste with sauce and put it back in. Don't walk off, keep an eye on it will bubble fast and start to blackened. When it's lightly starting to blacken it's done. For fried, I take the cut up quarters out(cut up before boiling) of the stock, drain and dry batter and fry. I make pan gravy with the chicken fat and flour fried in a pan and add stock and any seasoning. Yep, this man cooks, LOL

I would leave out the cream for the icing. Then it will taste more buttery and be thicker and easier to spread. Also similar to the way you make a crumb coffee cake and so the cake will be ready sooner, I would just mix the frosting ingredients (leaving out the cream and not melting the butter) and put them on top of the batter. If they sink in, you'll get a streussel effect.I might not look as pretty but it should taste the same and when you take it out of the oven and it cools, it is ready to eat.

The pan measurements are outside. I've never used ceramic for baking pound cakes. Ceramic conducts heat differently than metal, so you may have to adjust the baking time and cover the pan if you find the cake over browning.

@joyofbaking

A loaf pan holds about 6 cups (1.4 liters) of batter. If you want to use a round pan, then you would probably want to use an 8 or 9 inch (20 - 23 cm) round pan. Here is a link to the Pan Conversion page. www.joyofbaking.com/PanSizes.html

Hi Stephanie, I am stuck and need your help with this cake. My cake turned out very hard from outside. Not able to figure out where have I gone wrong. Hence writing to you the details below.. I tried one third of this recipe and the cake was super soft, super moist and extremely delicious! Even holding it I felt I will break :) So I decided to bake the whole cake for a formal friend of mine. I have an 8x4x3 pan and the cake got just completely baked in 52 minutes. However the corners and edges seem to be too crisp or may be i can call them hard. Touching from outside feels that the cake is soft inside but doesn't feel as soft as with 1/3rd ingredients in a smaller pan. I am not confident of sending this across :( I do not know if the size of the pan could be a problem..I did follow the recipe as it is. Butter too was soft and not hard or molten. My oven temp was set to 180 in both the attempts. Could you plz advise what cud have been wrong. I really need to know. Many thanks Kriti, India
@joyofbaking
4 жыл бұрын
The crust does tend to be crisp when the cake is first baked. But if you cover it and store it overnight the crust does soften. If you find the crust over browning as it bakes, you can cover it with a piece of foil.
