Nice job Stewart. Your video has good information. In addition, there can be a benefit to collaborating with the EOR regarding building movement anticipated "after" a framing system is installed. In some cases, this results in lesser movement than the amount shown in a project's contract documents.

is there a test regime to assess the watertightness of that joint when deflection occurs?

There is common curtain wall water pressure testing that may be done to assess water tightness and leakage.

What if deflection/slip track installed for the building movement and beneath storefront installed? can we consider less movement at the head. Thank you

If deflection slip tracks are included in the wall structure (cold form steel) then the glazing system does not have to accommodate building structural movement. Thanks for asking

You show a calculated movement of live load and thermal to be 1.45". It looks like you are saying that is the required joint size but the joint needs to be double the movement so it would actually be about a 3" head joint. Correct?

YES. You’re absolutely right. Sealant can only be squeezed to about 50% of its height dimension before it ruptures.
