BULALO | Beef Shank, Bone Marrow and Vegetables Soup
Ready in 2 hours Serves 4 to 6 people
Ingredients:
- 3 liters (12 cups) water
- 2 medium-size white (or yellow) onions, peeled and sliced in wedges
- 1 ½ kg beef shanks with marrow and bone-in, pre sliced into 1 ½ inches thickness and washed
- 2 pieces corn on the cob, each one cut in three equal sizes
- 3 medium-size potatoes, peeled, washed and cut into two-bite sizes
- 15 pieces green beans, washed, trimmed off the tough ends, and peeled away the fibrous strip along the edge
- 1 medium size cabbage, washed and quartered
- 1 stalk of leek, cut into 2 inches length
- 4 bunches of Bok Choy (pechay), ends trimmed and rinsed thoroughly
- 1 tbsp peppercorns
- 4 tbsps fish sauce (patis)
Instructions:
1. In a deep cooking pot or casserole, add water. Cover and bring it to a boil over high heat.
2. Add the meat, cover and bring back to a boil.
3. Skim off any built scum during the boiling process.
4. Once the scums are removed and the broth is clear, lower the heat, cover and simmer for 45 minutes.
5. Add onions, peppercorns, and fish sauce (patis). Cover and bring it back to a boil over medium heat.
6. Add corn on the cob. Cover and continue cooking for 10 minutes.
7. Once the meat and the corn are fork-tender, add potatoes. Cover and let them cook for 5 minutes.
8. Add green beans and cabbage. Cover and cook them for another 5 minutes.
9. Add Bok Choy (pechay). Push down gently until the broth covers them.
10. Add leeks and push down gently as well until the broth covers them. Cover and turn off the heat.
Note:
The heat from the broth will continue to cook both Bok Choy and the leeks without overcooking them.
Serve and enjoy!
Tips:
1. This can be a complete meal on its own or can be served with warm white rice.
2. A mixture of fish sauce (patis), calamansi (Philippine lime) juice and bird's eye chili is the dipping sauce that is commonly served with this dish .
