When I knew I was having surgery (this was about 20 yrs ago when my children were under 5) I spent a weekend shopping for and prepping 2 weeks worth of dinners. I cleaned out the freezer (back then we just had a small top freezer), and had disposable pans on hand. After I cooked and packaged the meals, I wrote on them what they were and the time and temp. to put them in the oven for , which was usually 350 for an hour., then stacked them in the freezer. All my husband had to do was pull one out, and heat it up in the oven. This was huge for us. No fast unhealthy food, and I knew I would have a hot, delicious meal as I recovered. Your future self with thank you if you choose to do this too before your baby comes, Congratulations. 🥰🍃🍂🍁🍎💗✝️🥰🍃🍂🍁🍎💗✝️

If you want an easy Mexican flair to these burritos, just add about a tbs of tomato- chicken bouillon for each cup of liquid, and some onion, or a couple of smashed stewed tomatoes, or celery top, or cilantro, or all the above. For the beans, just use your potato masher with some bean liquid (um, like 2/3 cup bean liquid to 2 cups beans). You don't have to add oil if you don't want. Heat them through until fluid half evaporates or to consistency you like. They thicken as they cool. You can add some sautéed onions, garlic, cilantro, Ortega peppers, and ground meat of choice. Stir in some cheese for some beef, bean, and cheese burritos. You can do so much with rice and beans. They're very forgiving😁 Just play with them. Oh, and try jasmine rice😉
