you can use carnation or condensed milk instead of kola in a pinch...sweet cream essentially. Terrific Work. This guy is a STAR.

I make this with regular cut chicken pieces and comes out delicious every time :) Instead of marinating (because I always decide my menu in the last minute) I just put the freshly marinated chicken directly to a sizzling pan with butter and cook covered on low flame until all the liquid gets evaporated and chicken gets a bit charred for the grill effect. The chicken always comes out tender with a bit of smoky flavour from the char. I also substitute khoya with milk powder because I don't get it here.

I made this today with your naan recipe, both turned out great! I couldn't get mt hands on khoya so I skipped that, and used a few ground cashew nuts. This recipe is tangy, and comes together surprisingly quickly for something so flavourful. I have tried other butter chicken before, but so far this is the best. Also I must say, just frying the chicken in the butter after that yoghurt marinade, that tasted excellent and is another recipe in itself. I often wonder whether the recipe quantities in the description box are correct. I made this recipe based on my visual judgement of the quantities you used, and used the quantities in the description only as a guide. You might want to check and amend that. But thanks for the recipe anyway. :)

Thanks for posting! I modified the recipe for dinner tonight, and it was amazing. What I did: Made the gravy with less chilli, the right amount of flour (there's no way you only added half a teaspoon - I saw that!!), celery salt instead of Kasoori Methi (unavailable in my town), condensed milk based khoya, and no cream. I then diced the chicken (no marinade), put the chicken in a plastic bag with the hot gravy, and cooked Sous Vide @ 60C for 18 hours. I then removed the sauce and cooked chicken from the bag and added the cream. Magnificent. Thank you!

I've tried this recipe out a couple times and it's really good! I would recommend that people start by adding less than the 2 tbsp kashmiri chilli powder, then add in more later. I don't eat as much spicy food so my tolerance level is a bit lower. One issue I have been having though is that the khoya isn't melting into the gravy. I grate it into pretty small pieces, but even after it cooks in the gravy I still see the whole pieces of khoya in there. Is it supposed to do that? I wonder if I should try a different brand or something, though I don't know if I could given that there aren't many Indian grocers in my area.

I made this last night and it was the best curry I've ever made. Well worth going the extra mile making your own khoya (I couldn't find it anywhere) and deep frying the onions. I also added the ground up seeds from 2 cardamom pods to the spices as I wanted that aromatic flavour I remember from having this dish in the past. If you're a wimpy Brit like myself though I would perhaps consider dialling down the chilli powder slightly - ouch! Thanks VahChef!

This one really good recipe . He uses Millard reaction on the chicken to get the flavours , I love his passion and how animated he is while enjoying his art. After making this particular recipe multiple times to tone down the dish I skipped the methi (fenugreek) and vola .

Kasuri methi i dont know but, i was inspired to do the black forest cake after seeing your video, for that I needed a cream, i tried many shops and super mkts but did not find any where, please help. I tried this recipe yesterday. It was AMAZING!!!!!! I ran out of onion yesterday, so I used sauteed leek instead. I forgot to add flour, I did not brown the chicken before cooking it on low heat, I used fresh methi which gave the sauce a weird color. But the dish was still amazing! It is by far the best Indian chicken recipe I've ever used. Thanks Vahchef!

I always put almond and/ or cashew paste. White poppy seed paste can be put as well. Somehow always marinade with ginger-garlic paste.

This was amazing. I used little bit of cream mixed with powdered milk for the Khoya (just because I can't see myself spending an hour to make the Khoya) This recipe is out of this world. The sauce has so much depth of flavor and rich texture. This dish is so simple to make yet carries so much awesome flavor. Thank you, chef!
