For the first time EVER I am watching the Harry Potter movies which has inspired me to make a Butterbeer Cake!
If you have been to the Wizarding World of Harry Potter you might say Butterbeer tastes like a mix of cream soda and butterscotch which is exactly what we will be putting in this cake. I’ll be following the original recipe posted by Liv for Cake (linked below) with a few modifications and twists along the way!

🎂 Butterbeer Cake
4 ½ cups flour
4 ½ tsp. Baking powder
200 g butterscotch instant pudding mix
1 stp. Salt
2 cups butter, room temperature
¾ cup sugar
6 eggs
2 ½ cups cream soda
2 tsp. Vanilla.
🗺 Directions
In a large bowl combine the flour, baking powder, butterscotch instant pudding, and salt.
In a stand mixer fitted with the paddle attachment beat the butter and sugar. Add the eggs one at a time. Alternate adding the dry ingredients and the cream soda. Add the vanilla.
Line your pans with parchment paper and oil. Divide the batter evenly, make sure it is level, and bake at 350°F for about 20 minutes or until a toothpick inserted in the middle comes out clean.
Let cool completely before frosting.
🤍Marshmallow Frosting
3 cups butter, room temperature
4 cups icing sugar
800g marshmallow fluff
2 tsp. Vanilla
🗺 Directions
In a stand mixer fitted with the paddle attachment, beat the butter until creamy and add the icing sugar a spoonful at a time. Incorporate the marshmallow fluff and vanilla.

🌟 Review and Tips
The original (single batch) recipe makes enough batter for 3 6” rounds. I doubled the recipe and had enough for 3 10” rounds.
I reduced the sugar in the cake layers and the frosting.
The cake layers are super moist and the marshmallow frosting is nice and stiff.
I added the caramel sauce and the butterscotch chips in between the layers which definitely made the cake a lot sweeter.
