I've made it two times already, both styles. First time I made it with a bit salty cheese, second time with some ricotta, works both ways. Recipe is perfect. These buns are delicious! And I had no special thread for culinary, I just took 100% cotton thread (a bit thicker than ordinary thread) and soak it in olive oil. It worked.

So few people will actually try these because of all the work involved. People today expect to pop it out of a can and throw it into the oven. Too bad. These are so much better than anything you get from a can, and the work you put into them shows how much love and respect you have for the people you serve them to.

My 14 years old make them last night! They look super cute and they are delicious. We wanted to test them before Thanksgiving and we are happy we did. Definitely, these cuties will be on our table this coming holiday. We put oil on the string like somebody suggested on the comments below, but the strings dried up, so it didn't make any difference, just be gentle and careful while removing them.

Good video. I like that she showed the difference in the condition of the dough with proper kneading. Sometimes dough will condition faster or slower depending on environment...cold, hot, humid or not. Same with rising. It is a “feel” thing and time will differ from day to day. Same with amount of flour or liquid additions. It comes with practice and experience.

Great video!! I’m going to make these to my boyfriend’s mother’s house for thanksgiving! Here’s the instructions: Pumpkin dinner rolls 1/2 cup of pumpkin purée Prepare the dough 1/2 cup of milk 1/2 cup of pumpkin purée 3 tbsp unsalted butter melted 1/2 medium egg including shell beaten save the rest for egg wash Mix To same bowl add: 1/4 cup light brown sugar 1/2 tsp salt Mix well Add to same bowl 2 tsp instant dry yeast Mix Add 2 1/2 cup all purpose flour Mix Lightly knead to form dough Cover the bowl and leave to rest for 10-15 minutes at room temperature Knead the dough on floured surface Stretch and fold (8-10 minutes) If dough is too dry add milk 1 tap at a time If dough is too wet add flour but only small amounts at a time Slap dough onto counter (knead) (15-20 min) Dough should be “tacky” not sticky Windows test: can stretch the dough thin but not tear Add a dash of olive oil to proofing bowl Coat all sides with hands. Cover with a damp towel and leave to proof until doubled in size, 45-70 minutes depending on temp (warm rises faster) Remove dough and knead lightly (2-3 minutes) Cut into portions 40-45 grams (1/3 cup) each Flour hands and shape into balls Then flatten slightly to shape Dip scissors in oil and snip 8 times) to make pumpkin grooves. Cover dough and proof until risen 75% (40-55 min at room temperature) Preheat oven to 355 F 180 C Prepare egg wash Used egg saved from earlier 25 gram 1 tsp water Strain and apply thin layer to dough Use paint brush end to make a small hole on top each Bake on middle rack 20-22 minutes (with top and bottom heat) While still hot coat lightly with butter Use pretzel sticks or similar to fill in stem

Seeing all the comments I thought it would be super complicated... Just a bit more work than any other dough. I usually don't do doughs since I don't eat bread but I really want to make these filled with apples and cinnamon. Would that work or would apples be to watery for it?
@ohioladybug7390

Vale sth ...I am not sure that would work with this dough because it is a very moist dough and apples do provide a lot of moisture. Maybe try more of a dumpling dough?
