豬腳麵線是台灣常見的一道菜餚,
豬腳加上麵線組成,因為細長的麵條(不可切斷)代表長壽.
常用於祝賀祝壽,給長輩祝福,生日時祝壽、生病出院等...一定會食用
豬腳:採用溫體豬.要煮出無腥味的白湯豬腳必須清洗,泡水 清洗到完全去血水。悶燒鍋煮40分鐘。(爐火~小火慢燉二小時)
蔥,薑,酒 冷水川燙去雜質,再清洗乾淨。用清燉豬腳高湯配上手工清麵線.簡單冰糖和鹽巴調味,清爽不油膩。
麻油麵線:麻油薑片爆香加入枸杞增香甜味,吸飽滿滿豬腳膠原高湯更加好吃。
