I will show how I make Gang Naw Mai (ແກງໜໍ່ໄມ້ = Bamboo Shoot Soup). As always, I like to make a lot when I cook because I share with friends and family. In this video, I am making enough to serve up to 40 people. If you are serving fewer people, then you have to scale it down.
INGREDIENTS:
8 cups Yanang leaf extract (see my Moke Naw Mai video for more information)
-- you can use canned juice, frozen juice, or extract from the leaves.
1 TBSP MSG (optional)
1 TSP Salt
1 cup Padek (fermented fish sauce)
12 Fresh chili peppers
15-20 Shallots
3 stalks Lemongrass
1 cup Glutinous (sticky) rice soaked for 30 minutes
6 cans Bamboo shoots, sliced or smashed into small strips and boiled
8 cups Mushrooms (assorted varieties)
1 Small Asian Pumpkin (more or less)
2 cups Rice paddy herb (phak kha yang)
2 cans Quail eggs (optional)
