INGREDIENTS
1/2 kg beef tripe (boiled and tenderized)
5 cloves minced garlic
1 pc chopped large onion
2 pcs sliced chorizo de bilbao
4 pcs sliced chicken sausage
1/2 cup tomato sauce
1/2 cup green olives
1/2 cup chick peas
1 tsp. paprika
1 tsp. sugar
1 cup beef stock
salt and pepper to taste
slice the beef tripe into strips bite size
boil sliced tripe until tender
saute garlic and onion, add the tenderized tripe and saute for another 3 minutes.
add the silced chorizo de bilbao, stir.
season with ground black pepper and paprika, stir.
add the tomato sauce, stir. add the beef stock and simmer for 2 minutes.
season with sugar.
add the chicken sausage, green olives and chick peas.
simmer until sauce thickens.
