Just discovered your page two days ago and been binge watching your videos quite a lot ... LOVE that you discovered the chicken over camp fire .... I'm a downriver canoe instructor and I've been doing this for over 20 years doing long 3-4 days weekends treks and one thing I always bring with me, even when I know we have portage, I always bring my cast iron Dutch Oven... not only have I cooked chicken, also roasts, ham and more than my share of homemade bread ... nothing like homemade bread baked in a Dutch Oven and eat it on coals from a camp fire, mate you need to try it !!!!

Great job on the Chicken, Team. It’s as simple as that. Another way to regulate the “heat” is to move it further back away from the condensation of the heat. Another form is to cook it on a spit. You just tie up Chicken tight with Butcher string and stick a debarked Stick through the chicken and support across two sticks on each side of the fire. Rotate manually every 10 minutes or so. Thanks for all your great videos, you guys.

You ever watch Buckin" Billy Ray on here? He chops wood to put it simply but he also replaces axe handles and has bits of advice etc. But when he chops at a very large piece of wood, instead of the huge dramatic split down the middle, he goes to the edge of the log and hacks slabs off. You can do the same batoning. Instead of putting the knife in the middle, put it off center toward the side and try batoning a piece off, then another and so on... making it smaller then maybe going for a center split once it's more reasonable in size for the knife.

You asked so here’s a question. Why don’t you stay in the huts? I haven’t tramped in NZ since 1996. Back then, many times when I camped in the bush, possums would climb into the trees above my tent and complain about my presence. Have they stopped doing that? That and the sandflies drove me into the huts. Round Waikaremoana, the damage to the ground done by pigs - 100 metres beside the track ploughed - was concerning so I used the huts there. I know some of the huts cost a fair bit but, back when I visited, a Hut Pass was good for all of the off-the-beaten track huts. Does the Hut Pass still exist? Lake Mann Biv and Lonely Lake Hut are still treasured memories. Well done on the chicken, by the way. I’ll be impressed if you bake a cake for 5000 subs. A Victoria sponge maybe.

Cheers. Couldn’t believe how well in turned out. It wasn’t that much of an effort either. The dji mics worked great but had a few issues that were my fault.
