Been telling the Chinese restaurants in US there's no curry powder in SG noodles! Now I realized it's from HK. I asked them to remove curry powder, add broth and simmer down to near dry. Then it will taste just like Johor version of SG fried noodles.

Singapore Mei Fun might be my favorite dish. Mixing curry powder in water makes sense. When not doing that the noodles are a bit gritty. From experience. Will modify my approach now that I know better.

Hi Roland nice recipe.. in Malaysia, our version of Sing Chow mihun is using Le Perrins sauce, a little tomato sauce n soy sauce.. perhaps one day you can try cooking tis way.. using chinese sausage n eggs.. very tasty also..🙏🏻🙏🏻

It depends on what kind of store you buy the curry powder from , you can buy from an Asian store and it will taste different than buying from another store… you will have to find one you like the taste of … you can also get it in cubes that are really good too 😊 lots of choices have fun finding the one you like best

Hi ijo. Michelle is right. You can use any meat curry powder. Since you’re from kerala, you can just use the curry powder you have on hand. The curry powder we get in Singapore are very to the ones from south India. Happy cooking!
