It's a tradition dating back to the days when Poland was a part of the eastern block. Communist authorities gave away carps for Christmas but there was a problem with lack of refrigerators so they sold live fish so people had to contain it somehow so the bathtub was kinda the only option. Carp are actually great for eating! Lots of Asian dishes that use them. Lots of traditional European dishes too. The meat is pretty oily, but has a relatively mild, but specific flavor. The important thing to remember is that the pin bones are thick, and branch out like tree branches. So you can’t remove it from the filet. Just be aware of that fact when you’re eating the meat, and you’ll be able to avoid all of the bones.

Chinese style steamed carp with soy sauce, ginger, and green onions is probably the best way to do it. Keeps it from being too dry since it’s such a lean fish.

Carp taste fine. That is a bit fish of artificial snobbery against bottom feeders. Catfish are also bottom feeders. Taste fine. If you Filet a carp and cook it as if it were Bass or anything else a regular person would be hard-pressed to tell the difference or that it was even a carp.

To make it taste good you cant just pull it out the river and cook it. You must put the fish in clean water for a couple of days so it cleans out the mud through their system as they are bottom feeders. Get rid of the mud as it affects the flavor and then apparently its pretty good.
@brianvanessen91

Depends on the variety of carp where you catch them and what they are eating. I usually catch them locally (NorCal) when fishing for Bass, Lake salmon, and trout, but not when I'm fishing for our Catfish and Sturgeon. go figure lures and jigs vs set baits.
@greenlink6471

That is a European tradition and also complete bullshit. Try bleeding your carp out. You will notice a difference in the quality of the meat. It makes way more sense than trying to wash mud out of the parts of the fish you are not gonna eat anyway.
@birbdad1842

That's such a myth. Bottom feeders dont taste like mud. It wont taste any different after cleaning. Catfish, eel and other fish are bottom feeders, they all taste wildly different and are local delicassies. If you catch carp in good water, it will taste excellent. Sure, if you catch fish in stinky dumps, it will taste bad. But everything will taste bad coming out of it.

The traditional way to get rid of the fishy taste in my country is to let the meat be fully submerged in mixture of milk, water and salt (1 liter of milk for every 2 liters of water and the more salt the better) for minimum 8 hours (up to 2 days in fridge or 1 day without fridge). After that you pour away the mixture and the meat has very buttery flavour. Edit: This technique basically bleeds the fish. That is the reason why the milk & water mixture is poured away at the end, and you can see that the milk will change colour to light pastel pink. Another bonus of this method is, that skin and smaller bones get softer. Still be careful when eating any fish tho and don't feed fishmeat with bones to pets without grinding it at least.

To cook carp, clean and scale it, rub the carp completely inside and out with olive oil, sprinkle salt, pepper, and other seasonings to taste. Place the carp on a clean maple board and bake at medium-low heat until lightly browned and the meat starts to easily separate from the bones. Then throw away the carp and eat the board.

It was one of the best fish I have ever eaten.

I've heard that if you filter the fish properly, it won't taste as bad. I've been told the reason they taste so bad is because they usually live in gross water and filter said water differently, which leads to them picking up the horrible taste. I guess if you really want to eat a goldfish, that's just one option. I knew a guy who just swallowed one whole in the middle of class. He was get in trouble for that, mainly because it was the teacher's goldfish.
