18 Chicken Legs
90g Ginger
90g Galangal
18 cloves Garlic
3 Onion
3 tbsp Coriander seeds
3 tbsp Cumin seeds
12 Bay leaves
3 tbsp Turmeric powder
5 tbsp Salt (adjust to taste)
9 stalks Lemongrass
3 litres Water
9 tbsp Sugar
600 ml Coconut milk
1½ tbsp White pepper
Batter:
450g Rice flour
6 cups Gravy (leftover marinade)
3 tsp Salt
6 Eggs
Sliced cucumbers
