As for the fumes and your eyes watering from the onions, The damp rag ? Do yourself a favor and put a fan on the edge of your cutting board so it blows the fumes away so they do not come up in your face. It only took me thirty years to figure that out, I had come across a battery-powered fan that I put next to my stove to blow the hot steam away from the pot of boiling water, I was cutting onions and thought that would be a good idea to keep the fumes away from my eyes. Best idea ever... You should try it then make a video to show everyone how well it works.

Just used my new Carey canner for the first time to can goat stew following this video. Canned perfectly -- popped one of the jars for dinner the next night and it was delicious (and I didn't die)! Thanks for the walkthrough!!

I just got myself a Carey Electric pressure canner!! Im so excited. I used it the very next day to can some chicken broth. So easy. I'm definitely gonna do beef stew. Thanks for sharing this with us.

Ooooh, congrats on getting one! I've struggled with finding dates myself. I've heard months up to a year or two. I haven't found a scientific answer. I do know that I've eaten meat I canned 3 years ago without any issues. Strawberries I canned 6 years ago look real sketchy so I didn't try them, lol. I know they discolor with time.

A sharp knife is the trick to slicing onions 😢and not getting tears in your eyes 👀 I can’t remember the last time they brought tears to my eyes and I slice onions almost everyday! 2 things I can’t do without are onions and hot peppers 🌶️

Do you vent it when done? I set my timer for 1 hour, and unplugged it, is it safe to NOT vent it?

Don’t vent it when done. Let it come down all by itself for the hour after it’s unplugged…otherwise, your jars could burst.

If I wanted to can chili, would I have to cook it fully and then can or can I just put the ingredients into the jars? I would cook my beef first of course.

You don't fully cook the beans, and you can just lightly brown the meat, the rest of the cooking happens in the canner. You would still add all the things together prior to adding to the jars.

Just found and subscribed to your channel this morning. I am for the most part, brand-new to canning. I purchase a 23 quart presto canner about 2 years ago and have been watching canning videos ever since.... but to date, I've only completed one canning session of ugly chicken. I am intimidated not only by the canning process, but also feeling obligated to do large canning projects because of the size of my canner and because that's what everybody in the videos do (large batch, all day long, canning projects).... I am disabled and on a low income so I can't afford to do large batch projects nor do I have the physical stamina to do large batch projects.... So, with a gift card that I received I decided to purchase a Carey 9.5 Electric Canner. I'm now on the hunt to find videos and recipes for SMALL BATCH canning projects. (And if they're using the Carey/Nesco canner, all the better!) This video fit the "bill" (in more ways than one 😊) I'll be watching your channel closely! Thank you

Thank you. I'm so glad to hear that. And I absolutely understand- large batch canning involves so so so much prep, and then babysitting the pressure gauge all day - it's a lot. I originally was not thrilled with the small capacity on the electric canner, but it's so much more convenient. I find I can more since it's easier and faster. Trade offs, I suppose, but I find I'm loving pressure canning better with the electric canner.

My instructions say 8, but I like to put 12 since it steams so much. 8 is the minimum. I've never run OUT of water using 8 cups, but it's been close a couple times.

Hi there. Thanks for the tutorial! Do you find you get more sealing failure with the nesco? I want to love mine but I’m struggling with not getting a seal more often than what makes me happy.

I almost never have a failed seal. I think spaghetti sauce failed me once - I filled the jars too high and too much bubbled out. So odd - I've had extremely high success on sealed jars. Most of my seal issues go back to me overfilling, actually, and since I've I recognized that, I've been almost 100% successful. Hopefully your solution is just as simple! 🤞🤞🤞

May I ask why do u have 12 cups of water...I am using a nesco . It said quarts 4 cups. Pints 8 cups. Not sure why 12 is it a different Process?

I had one batch almost (but not quite) dry out when only adding the 8 cups, so now I add more. It's probably overkill, but it doesn't hurt anything. Rather have too much than too little!

I just purchased a Carey electric Canner. I have used the PC that go on stove for 50 years. Does the Carey weight fit really loose and a small amount of steam sounds as it pressure cooks. Everything else seems to be normal?

When the food is cooked down and juice comes from the meat and veggies, the meat and veggies then take up less space. So you don’t need significantly more headspace for that, it's factored in.

Did the timer run down? Regardless of the beep, if the time ran completely down, and you unplugged it to allow the slow pressure release, and the jars sealed - you are good!

Wide mouth jars are easier to fill and empty, but are a snug fit in the canner. However, you can use either, it's a personal preference. I get a lot of my jars used, so I have a hodge podge mix and use both.

I use 8 as a minimum, the only thing extra water should impact is how long it takes to boil. I had one batch with a long processing time that ran almost dry using the 8 cups.

SOS Hi, I just opened mine and noticed the pressure weight is already attached. I am concern because the dial goes all around in a circle so it doesn't look like it lines up to well and is kind of floppy. Not sure if this is what its supposed to be like. Also when you clean and remove the gasket don't see a picture showing if I put it on right or not. The picture in the phamplet is to small to tell. Guess I'm not caning tonight till I get these question answered. Please advise. Paula

Hi Paula - the pressure dial does feel loose and floppy. The gasket gets snugged around the metal ring. It's pretty snug once it's in place. I wish it would let me post a picture in the comments! But if the gasket is a "V" that goes around in a circle, then the metal ring that holds the gasket fits inside the "v". Hope this helps!

Hi, Everything went well till I had to turn to airtight. Tons of steam and the machine display read off and I unplugged it. Turned back on, hit canning and put in time and its counting down. I hear the jars giggling and the time has started gone down and little bit of steam is sizzling. Do you think I need to scratch everything and completely start over?.

I usually load the canner with water, fill the jars halfway with water, and set the canner to slow cook for 30 minutes. Dual purpose cause it heats the canner too :)

You can use either, it's a personal preference. If you have both, wide mouths are easier, but are a much more snug fit in the canner. It's all trade offs. However, if you are canning meat alone, wide mouths make it infinitely easier to get the meat back out of the jar.

Hi there! There are no approved methods of canning cured meats. Those rebel canners still do it, and the ham has to be cooked first, but no. It's not recommended.

HELP, first time use of Nesco followed all instructions, started exhaust countdown then stopped exhaust went to spinning I was afraid to wait to see if exhaust started again so I turned it off, waiting for complete cool down to try again. Please Help

Hi there. I'm a bit unclear on what happened here. The countdown started, you switched it to airtight... After that, you just sit back and wait for it to hit the right pressure and finish counting down the regular timer. Nothing else to worry about. I would restart it, and try again, you've got this. :)

the canner quit the exhaust countdown and went back to spinning. I didn't do anything. It started to exhaust, I could hear and see the steam. Then it wasn't exhausting went back to spinning. I was afraid to let it keep going so I stopped and unplugged. waiting for cool down to try again. Thanks@@homestead4life18

@sheliahoosier4382 it will start the timer after the spinning, just wait it out next time, you were almost there! I have freaked out at this step a few times, it felt like it spun too long. But it's fine, trust the process! It's very nerve racking learning a new machine, but this canner is so worth it.

I wasn't sure the countdown stopped at 7 min and started spinning, I was afraid to let it keep going.does it tell you when to close off exhaust or when the display shows 000 you close off? Thanks so much for getting back to me.

I can't remember, but regular mouths do fit better in the canner, but I try to use wide mouths for meats - easier to get back out.

That's a personal preference - regular mouths fit easier in the Carey/Nesco canner, but for me it doesn't matter unless I will be pulling the food out of the jar later by hand. Meats end up all sticking together, so wide mouth is easier. Soups and stews have been easy in a regular mouth. But if they are both available for the same price, wide mouth is probably more universally preferred.

I couldn't get to my wide mouth quarts. Just wanted to see how well it done. I absolutely love it! And I'm happy that when I do my stew I can use my regular mouth quarts. Thank you so much!
