Ole granny here, for you newbies, ^^^^^ this is one of the cheapest and easiest things you can start canning with. No hoeing, picking or sweating. lol

Great instructions Josie. I also have lots of beans to can. I canned some older beans last week with this method and they turned out good. My daughter and I are attending a canning class at Vo-tech Saturday. So excited to get her into canning! The tip about not tilting the hot jars?! I learned that the hard way! 😂

I have not canned beans/peas. I’m fairly new at canning, but I really love it; and it’s such a convenience food to have put by. I was terrified of pressure canning-new personally of one of those horror stories; but I’ve also known personally of hundreds of non horror stories. I stepped way out of my comfort zone and started; so very glad I did. Thank you for showing how very simple this is to can. Blessings.

Hi Josie! Great instructions on the canning black eye peas.Finally got around to canning them ..we have 9 pint jars ..all sealed and beautiful! I tried to send a picture to u..but didn't know how. Ty again :)

I saved for a year to get a pressure canner and two dehydrators. Now I need to get more jars and lids. I'm not physically able to have a real garden but I plan on using grow bags. Have most of the seeds I want so I'm almost there. But I'll have to go to farmers market to buy what I'm not able to grow. I think when we have to watch our pennies it makes us so much more thankful for what we do have. I pray that you will have your desires soon, but God's timing is always right. Hang in there and continue praying. Hugs

Josie, I don't think I have ever had black eyed peas before. I have been canning all kinds of beans and peas lately. My daughters really love split green peas, so I will be canning more of those this weekend. Thank you for sharing

Josie, I have canned any and everything you can put in a jar for 50 years. I must say your canning tutorial is the best I have ever seen. Please do more for the inexperienced canners out there. Your instructions flow smoothly and easy for anyone to follow.

I was canning some broth today and sure enough, my gasket had blown! Ha! I was so glad i had a spare on hand. It was the first time I’d ever replaced them. Now i see i should have done that a couple years ago! Not so much steam and water dripping out 🤦🏻♀️… I just didn’t realize. Will be ordering more this week! Your beans look lovely!!! Xo

You'll do fine. Just read all the instructions thoroughly. Not all canners are the same. I just started canning last summer, and have done beef, ground beef, pork, bratwurst, chicken, black beans, red beans, white beans, & pinto. Also don't be frustrated if/when you have a jar that doesn't seal. That happens. I just had a jar of beans not seal in spite of doing all the right things. I simply turned it into refried beans. They were yummy! Oh, it might be helpful to find a video that uses your specific canner just to see how it works compared to others.

I think I have canned every type of pea and bean that Kroger sells. I also do a mix of pintos, kidney, and garbanzo or northern that I use to make chili with. I have some of that chili mix canned in the 3 pint jars that Bob White syrup used to come in. 5 of those jars will fit in a canner.

Miss Josie, I feel like you do: soaking those pecans over night before canning them would turn them into mush. I canned up 7 pints and 5 pint and a half jars today. ❤

We always open and heat them up, adding bacon or ham to flavor. Usually with fried potatoes, ham, and cornbread.

Do you use plain water or vinegar to wipe the rims? Thank you for this canning session, it is very helpful! I am a newbie to canning although an oldie in life.

If there are meats, fats or syrup/sugary items in the jar you would use white vinegar. For the rest water is fine.

If it is just veggies and water I use plain water. If it is meat, or syrupy of any kind I use vinegar.

I’m new to canning beans. I’ve never tried the no soak method. Would the amount of beans in the jar be the same for beans and peas? I assume for a quart jar it would be 1 cup of beans or peas?

Yes, amount of beans in jar and the cooking time is the same. And yes, quarts are 1 cup dry beans

I just filled my pint jar with dried peas and didn’t fill the jar anywhere close to the yours. Almost looks like you have 1 cup of peas. I added another 1/2 cup of peas to that that jar and it looks like yours.

The seasoning is up to you, but I think that bullion might get a little salty. Broth would be easier to control the sodium.

Do you do all dried beans without cooking first? Are they ready to eat afterwards or do they require additional cook time, besides warming?

I just made a can of pinto beans that I had put up like this to go with our supper. It’s according to the type of bean. They are all fully cooked but some like pintos, I like to thicken a little more. Black eyed peas and butter beans just need heating up. It is so convenient when your busy or tired.

I just warm these up and may add a little seasoning if I want. It depends on what you are using them for. If you are just eating the beans as a side then you might like them as is or you might want to thicken them. If you are making refried or adding them to a recipe you might need to drain and prep them ( like refried beans).

Two questions: A) Is it a must in the recipes to call for filtered or distilled water or broth? B) Can’t remember how many qts of water you said you had in the canner but do recipes tell me how much water to put in? We have well water.

Your canner instructions will tell you how much water to put in the canner & there is also a table that tells you what pressure (5, 10, 15 pounds)to use depending on your altitude.

Your manual will tell you but with mine it was 3 quarts. My granny had well water and that is what she used. She never had any problems with her canning. She was the best in my eyes.❤️

Yes! I do pinto, butter beans, and all kinds. The only thing I ever found out that didn’t do good was split pea. It canned good but they totally creamed. Lol Hope that was helpful. God bless

You can use When you do different types of beans you may need a different measurement of beans. I usually use 1/2 c. dried beans for pinto, kidney,and navy but 2/3c. for black or mayacoba(canary) beans. I find if I don't, there is to much liquid and I may need to open more than one jar at a time.
