pro tip...Caramelize onions in a crock pot! so much easier and they don't need babysitting I put mine in for about 10 hours on low.

One of my favorite homemade pizzas is a bechamel sauce, small cubes of crispy oven roasted potatoes, caramelized onion , pieces of thick cut bacon (optional) & a bit of gruyere cheese (or whatever you like). This jam would be great on that too!

Crock pot is a great idea. If you didn’t plan ahead for the crockpot, put your onions in the microwave (I know, sounds crazy) in two batches for 7-8 minutes, then put them in the melted butter in the pan while your second batch softens in the microwave. My mom did this every time she needed carmelized onions. She could get them browned up on the stove in 10 minutes after the microwave. Sometimes she would throw the second batch right in with the first batch and cook it 5 extra minutes, but if making French onion soup she would empty the first batch into a bowl and then combine the two when 2nd batch was done. This works great for smaller quantities as well. Thanks for all your inspiring videos and your sweet demeanor ❣️

Becky, I just wanted to say thank you so much for sharing this recipe! I made this and shared it with a friend of mine and she put it on ribs and she said they were absolutely fantastic! Mine did not jell up as much so it was more of a bar-b-que sauce. Again thank you so much!! Oh, I used the suggestion from a comment poster below who said to use the slow cooker for the caramelized onions and It works fantastically!! Thank you to all!!!!

So I know this is an older video but I was so intrigued by it that I walked into the kitchen to tell my husband about it. (I call him the Flavor Master). I kid you not, he was making a dressing for our salad with figs, onions, balsamic vinegar and mint and basil. Definitely will try this jam.

Oh oh also fig apple and hazelnut jam it's actually a compote but it's awesomely delicious and if you want to serve a fancy thing for people you take the little cocktail breads and toast them and then you put the jam on and then you put a half moon slice of fresh apple on top of that it's delicious!

They are Calamari figs. My grandmother had a tree. They are either yellow or green. ha I have a huge mission fig tree and was looking for a vidalia fig sauce recipe, couldn't find it, and your site came up. Excellent! Looks delicious!

I've done onion jam before but never with figs. Gonna try this recipe for sure! Keep canning girly. Also, I dice my romas and don't peel them either but I do get the seeds and juice out for a prettier product. Great family project the kids look forward to every year!

I have a bottle of fig balsamic vinegar and I can tell you that figs in balsamic go very well together and of course onions do as well. If you want to caramelize your onions quicker add a pinch of baking soda it is a chef's trick and it makes them break down in caramelize within minutes.

I have made strawberry fig jam and its really good. Its like strawberry jam but you use strawberry jello to make the figs taste like strawberries.

Hi Becky I am going to make this recipe hopefully this week. The Caramelized onion jam recipe calls for liquid pectin how did you change to powder and how much did you use? Also the fig jam did not call for pectin?

Excellent video, excellent recipe! Just making it now, and combining the recipes as well. For anyone else wanting to try this out, I’d recommend using only half of the lemon juice, and vinegars in the recipes combined. Then add more as you go to your liking. I used 1/2 cup lemon juice, 1/2 balsamic vinegar and 1/2 apple cider vinegar. I wish I would’ve used only one of the vinegars instead of both (just my preference) or maybe 1/4 of each and then adding as I taste. I did use 6 cups of sugar. Very tasty! I admire all your hardwork, Good job! :)

I saw in the video where you add the Apple cider vinegar, but did you end up adding balsamic as well? I also saw in the written recipe where you list out items that were omitted, just didn’t see that one included. Also, curious how are these holding up? I noticed you mentioned the balsamic one was not intended for canning/water baths. The jam/chutney looks delicious! I think I’ve told 3 people about it and your videos. I love the idea of using used lids for jarred items that you not canning. Heard that from another video of yours I think. I have always wanted to can, I have an unopened Pressure cooker in storage but hate the thought of wasting the lids now I have an idea of how to use them and not throw them out.

I use a Victorian steam canner for boiling water canning now. It eliminates the need for a huge pot of water for water bath canning. If u use one u will never go back

Make sure you are storing the mylar.bags jars in totes. That way you can save them from MICE. As well as food you store in glass jars need to be storage in a cabinet or dark place so no light in the jar and earth quakes are a problem. They also makeing mylar in different styles and companies.

I'm going to finish this up in the morning ( onions cooking in crock pot). Can I just add 1/4 tsp citric acid in each pint then water bath this?

That looks awesome! I'm still watching, so maybe you do at the end, but when I vary from a tested recipe I use kombucha test strips to test the pH. Water bath canning should be under 4.6, it just helps ease my mind because I can't seem to stop changing up the recipes for my tastes😜

Okay I realize this video is over a year old but I have questions.....first of all, did it hold up since you mentioned that one of the recipes wasn't a canning recipe? 2nd, how do you use this particular product, it sounds delicious and I adore caramelized onions? Good idea to leave out the spice on your first attempt at the recipe. You can always add the spices later if it seems correct for the final recipe you use the chutney for.

Great to know! I’ll have to try it! I’ve never seen figs that huge! Just a heads up, though. I noticed that one of the burners on your stove top has the double ring on it. When you’re cooking, and you have the full burner on and the pot or pan doesn’t extend to the edge of that burner, then you are just wasting energy. The smaller burner should’ve been the only one on for that pot. Thanks for the recipe!!!

You have to open the “description box” for the video to find the recipes and lots of other useful information. When KZitem content creators say they will leave information “down below” or “underneath the video”, they are talking about this same location. If you are using KZitem on a smartphone or tablet, you should be able to click on the title of the video that is displayed underneath the video. This should open/expand the description box for you.
