I tried your "no cooking dried beans" and just adding hot water and canning. Wow, it worked great. Beans were soft enough and I was able to add my dehydrated onions and salt. Oh my gosh. You saved me so much time and electricity by not cooking my beans in the slow cooker first. Thanks, thanks, thanks. My husband loves beans!

I am so glad I found you! I started canning last year due to your advice... I was scared. Oh my gosh! I love it! I made my money back with one summer's worth of canning. I do not have a big garden but, by using your advice to shop sales plus I also found UPick gardens and it really saved us money to the point I paid for my canner half way through the summer. Now that I have jars I am reusing, it is free this year! This year, I have started buying dry goods in bulk an will now start grinding my own flours, etc. Thank you for the good information.

Great video! I just started canning this year - and I'm just doing water bath canning for now. I have noticed how the food shrinks, so that was a helpful tip. I also had a jar explode in my last batch of tomatoes and I was wondering why, but now I think it is because I didn't leave enough head space. :) Thanks for sharing and I hope you're feeling better every day!

I'm a late bloomer/beginner. I purchased a Presto canner in 2015 and it's still in the box. Not confident yet so watching more video's. I've seen other canning experts use canning rings on the bottom of their canners if you don't have a bottom rack. I thought that was neat. Mostly I want to can for the poultry that we process for the meat and broth. Thank you for sharing and I'll watch more of your canning videos.

I love the towel tip. It's what I have been using in my regular stock pot to water bath can. I just got into canning a few months ago and I didn't want to invest in things before I really knew what I was doing and while I was figuring out if I liked it and wanted to continue. So far I've made salsa, jams pickles and pickled beets. I think I'm liking canning. It's so worth it to have good healthy home made food at you finger tips when you want it.

GOOD INFO Starry!......also don't forget to wipe your jar tops off before you add your lids and rings. Sometimes the grease in foods will keep it from sealing to. @homestead Macgregor. I don't know why pressure canning isn't done here at all, we do preserve differently here as we don't waterbath jams & jellies. Being able to use a pressure canner opens up so many options with food storage. I am quite jealous of your canning classes & being able to get pressure gauges checked.

You can use a large pot as a water bath canner, but it is not a substitute for a pressure canner as there is no mechanism to produce the pressure needed to get the contents to 240 degrees fahrenheit. Without the pressure, the temp can not get above 212F.

Do you know if it is okay to 'repickle' something. I made a batch of pickled quail eggs, using beets to color the pickling brine and of course therefore coloring the eggs.Apparently I didn't use enough beets in the recipe because the eggs just aren't that deep purple color I'm looking for. The jars have been sealed in a water bath canner and by all accounts are safe to eat. I just want that deep deep purple color we all think of when we think of a beet. I was considering reopening the jars, discarding the pickling brine, and starting from scratch. This time I'll be sure to put plenty of beets in the brine to get that color I'm after.I just don't know if it's safe to do that. thoughts?

thank you for this video! so great to see you doing so well and this is is just the info I needed. I am a total newbie when it comes to canning... I did my first attempt with tomato sauce just a few weeks ago with a water bath canner. After the jars processed for the required time and I removed them from the canner, I was still able the push the lid down and it would pop up. I tightened the lid and it sealed down and no longer pops up and down.... but I'm concerned if the sauce is safe. have you had this happen? do you think the sauce is safe to consume?
@StarryHilder
8 жыл бұрын
when you open the lid you will see if they aare sealed...sealed lid will be hard to pry off..it will be stuck on..if it didn't seal it will virtually fall off and your sauce wil lindeed probably have mold already starting ot grow on it

When shelving the finished product, the lid is manually loosened so if it rusts on, then there is wiggle room to work it off.
