Ingredients:
500g boneless chicken, cut into bite-sized pieces
2 large bell peppers (1 green, 1 red), sliced
2 onions, finely chopped
3 tomatoes, finely chopped
3-4 cloves garlic, minced
1-inch ginger, grated
2 green chilies, chopped (adjust according to spice preference)
1 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
1/2 teaspoon garam masala
Salt to taste
2 tablespoons oil
Fresh coriander leaves for garnish
Instructions:
Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add chopped onions and sauté until they turn golden brown.
Add minced garlic, grated ginger, and chopped green chilies. Sauté for another 2 minutes.
Add chopped tomatoes and cook until they soften and the oil starts to separate.
Add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for a couple of minutes.
Add chicken pieces and cook until they are no longer pink, stirring occasionally.
Once the chicken is partially cooked, add sliced bell peppers. Mix well and cook for another 5-7 minutes until the chicken is cooked through and the bell peppers are tender yet crisp.
Sprinkle garam masala and mix it in.
Garnish with fresh coriander leaves.
Serve hot with steamed rice or roti.
