This recipe is written for 8 chicken thighs, because I think that's the right amount for 4 people, but it's easy to scale down. Regardless of how many thighs you use, choose a skillet that holds them snugly, which is the best way to render the skin without burning. I'd make the full amount of dressing and use the extra in the next few days, it’s so good.
