Boil 15 hatch dry peppers (guajillo or Chile Colorado work great too), 2 tomatoes, 1/4 onion and 2 garlic cloves. Once it’s cooked and veggies are hydrated add everything to the blender with oregano, black pepper, ground cumin and water. Blend until smooth and set aside.
Preheat a large pot and add 2 1/2 lbs ground beef. Season with garlic salt and black pepper. Once it’s releasing its natural juice add 1/4 diced onion and potatoes (you can add any veggies). Cover and let it cook for 5-7 minutes. Once potatoes are getting soft add the salsa and adjust flavor with chicken bouillon and salt to taste. After potatoes are fully cooked it’s ready! Enjoy!
