Healthy, soft carrot bake 😊

Ingredients
2 cups AP flour
1 1/2 cup grated carrots ( approx 2 medium🥕)
1 egg
3 tsp brown sugar
1/4 cup evaporated milk, add more if needed
2 tsp baking powder
1/2 tsp salt
Blend grated carrots, egg and milk until smooth.
Mix flour, sugar, baking powder and salt.
Combine ingredients for form a dough. If dough is too sticky add more flour.
Cover with a damp towel and leave in a warm place.
Divide dough into 8 parts and form balls, then roll out into small thick discs. Can also be rolled out in one big disc and then cut to shape.
Fry bakes on low heat, turning frequently.
Serve hot with salt fish choka, or pair with melted cheddar cheese.
