Ingredients (for 4 people):
- 300 g of pork ribs (cut into squares)
- 400 g of medium noodles (number 4)
- 1 onion
- 2 or 3 tomatoes
- 1 potato
- 2 artichokes
- Saffron threads
- Olive oil
- Salt
- 2 liters of water
Preparation (15 minutes and 2 hours of cooking):
1. Peel, chop, and grind the onion.
2. Peel and grind the tomatoes.
3. Peel the artichokes, remove the outer layers, cut off the tips, remove the inner hairs, and cut them into half-moon shapes.
4. Peel the potato and cut it into small squares.
5. Heat the pot with a splash of olive oil.
6. When the oil is hot, add the ribs and salt, stirring to brown them well.
7. Once browned, add a little more salt and the artichokes.
8. Once the artichokes are fried, add the onion, and when softened, add the tomato.
9. Wait for the tomato to fry, then add the two liters of water and saffron threads.
10. Simmer for one hour and thirty minutes over low heat until the ribs become tender.
11. Add the potatoes and season with salt to taste.
12. After five minutes, add the noodles and cook over high heat for twelve to fifteen minutes, depending on the desired doneness.
And it’s ready to serve!
Tip: The saffron gives it that special touch for its characteristic color.
