Cast Iron Chocolate Chip Cookie:
170 g unsalted butter
130 g packed brown sugar
80 g white sugar
2 tsp vanilla extract
1 tsp of salt
1 large egg
1 egg yolk
230 g all-purpose flour
½ teaspoon of baking soda
150 g chopped dark chocolate
80 g chopped semi-sweet chocolate
Vanilla ice cream to serve
Preheat your oven to 180C with the fan on.
Start off by melting your butter in a pan, keep an eye on it and watch it carefully, we want to brown the butter which will give the cookie a toffee caramel flavour, but in order to get there we must pay close attention, the colour will start to turn into an almost caramel colour, as soon as the butter starts browning remove it from the heat and transfer to a mixing bowl. If we let it go too long the milk solids will burn, it can go from brown to burnt really quickly.
Add your brown sugar and your white sugar to your butter and mix well. You can use a stand mixer or a whisk for this. Once your mixture is smooth add your vanilla extract and your eggs. It’s 1 large whole egg and an extra egg yolk for moisture and richness. Mix these well for about 5 min and let it rest for 5 min, we want the sugar to dissolve. Mix again for a further 5 min, get the mixture as smooth and velvety as you can get it.
In the meantime, mix your dry ingredients by sifting your flour, salt and baking soda into a mixing bowl, then mix to combine.
Slowly add your dry ingredients into your wet ingredients. Use a wooden spoon or a spatula and fold them together only until just combined. Be careful not to overmix, we’re not looking to stretch the gluten in the flour.
When it comes to chocolate I like going for a blend of dark and semi-sweet chocolate, but your palate is different from mine, so use whatever chocolate you want. You can even add m&ms, or smarties and Reece's cups…go for it! Using a sharp blade roughly chop up your chocolate. It’s good to have uneven chunks, some small some large…that’s going to help with the texture of your cookie and it’s always a nice surprise when you bite into a big melty piece of chocolate!
Add your chopped chocolate to your cookie dough and mix evenly until just combined.
Spread your cookie dough into your cast iron pan and smooth it out so it covers the whole pan evenly. Place it into the oven and cook it for about 20 - 25 min, or until the edges have browned and started to pull away from the pan.
Remove It and let it cool for 30 min.
Serve with your favourite ice cream and chocolate sauce.
