I recorded everything in a modified Chapter 1, and all of the enemy sprites shown are missing AI so I had to replace them with zombies which worked pretty well. The only thing not replacing a zombie was the troop. Everything I tried came up with completely broken sprites so I just settled for the axe armor.
EDIT: Just realized that one of the menu graphics I showed isn't unused, it's Soma's soul count, whoops! Can't remember if the stars are used though
For those wondering how I made this, this was recorded on the PS3 emulator RPCS3, so you're free to edit all the game's files. I edited the stage graphics (.dds files) with photoshop. The only hex editing needed was to clear everything from the stage .dat file except for the zombies in the starting hallway, then I was able to switch sprites by replacing the .opd file of whichever enemy I wanted with the zombie .opd.
