Me and Kali have wanted to do this catch and cook ceviche video for some time now but every time we went out, we were unsuccessful at catching enough fish. I thought for sure I have jinxed it, but today was not only a great day on the water, but we are finally able to do a catch and cook video.
Ceviche is a fish style salsa, or chip dish that uses lime juice to cook the fish, even though no baking is involved.
The recipe is pretty basic and can be easily modified to taste. Definitely try some different spices or ingredients and if you find something that works really well Feel free to comment below.

Walleye Ceviche Recipe
- 4 walleye fillets
- 4 tomatoes
- 1 red onion
- 2 Serrano/Jalapeño pepper
- 1 English cucumber
- 2 avocados
- 6 limes
- 1 cup Spicy Clamato
- Hand full of cilantro
- 1 tbs Olive oil
- Hot sauce (to taste)
- Sugar (to taste)
- Salt & pepper (to taste)
- Chipotle seasoning (to taste)
Cut up walleye into 1/4” pieces.
Juice all 6 limes into shallow dish. Add fish to lime juice and mix well to coat. Refrigerate for at least 2 hours or overnight. (The longer you let it marinate the more “cooked” it will be). Stir every few hours to ensure fish is well coated.
Cut up all other ingredients into 1/4” pieces and add to dish with fish. Add Clamato & olive oil. Finely chop cilantro and add to dish. Mix well.
Add hot sauce little by little until desired spiciness is achieved. If mix is too acidic add a little sugar at a time to balance it out (start with 1 tsp and increase as needed).
Add salt, pepper & chipotle seasoning to taste. Mix well and serve with tortilla chips.
