Nice work. It looks like you smoked the eel without removing the spine and rib cage. Is that correct

Cheers 👍Yea bones in.I chew the bones to.get the flesh off.If it was a big one I would take the bone out however I think that it is better letting the bigger breeders go and eat the smaller ones.👍

I have a question I can't find an answer to I have just built a cold smoker and want to know can you cold smoke eel and how does it compare to hot smoke.

Yea you can cold smoke eel, you would want to try a small eel first and you would want to smoke it for quite a while but I bet that it would turn out awesome. Tell me how ya get on one day.👍

@@nakisteelo4761 I will I have hot smoked eel on a visit to Holland in a 44 gal drum they were small and so tasty I have just converted a large wine barrel with a NZ smoke generator for my favourite cold smoked mullet. obviously I cant hot smoke in a timber wine barrel. I will keep in touch as it will be an experiment as eel is way more oiler than mullet. thanks for the reply.

@@johnswinkels4383 Hang them up overnight or put it in the fridge for a day it helps to take the tension out of the flesh and make it more tender.

@@nakisteelo4761 I found a fan forced fridge works best for me to get the pellicule happening and another trick I tried is I replaced the sugar and molasses mix with maple syrup.you gotta try it.

A slow hot smoke.A cold smoke normally has the fire metres away and takes a day or two to smoke.
