Cerdo Asado Bávaro
Ingredientes:
• 4-5 lbs - cerdo para asar (Pork Roast)
• ¼ taza - mostaza amarilla
• 1 cucharada - mostaza dijon
• 2 cucharadas - aceite de vegetal
• 3 dientes - ajos picados
• 2 oz - mantequilla sin sal
• ½ taza - vino blanco
• 2 - zanahorias peladas y cortadas
• 1 - cebolla grande picada
• 2 ramas - tomillo fresco
• 1 hoja - laurel
• 2 tazas - caldo de pollo, caldo de res, o agua
• mezcla de ½ taza de agua y 2 cucharadas de harina
• Sal y pimenta al gusto
Preparación:
•Precalentar el horno a 350° F.
•Salpimentar y cubrir el cerdo con la mostaza amarilla.
•En un salten, a fuego medio alto, agregue el aceite de vegetal.
•Agregue el cerdo y dora todos los costados. (5 minutos por lado)
•Remueve el cerdo y poner en una asadora.
•Reduzca el fuego, agregue la cebolla, el ajo y la mantequilla y cocine por 2 minutos.
•Agregue el vino y desglase el salten.
•Cuando el vino se reduzca por mitad, agregue el tomillo, el laurel, las zanahorias y el caldo o la agua y cocine hasta que comienza a hervir. (aproximadamente 5 minutos)
•Echar todos sobre el cerdo en la asadora.
•Cubrir con papel de aluminio y cocinar en el horno a 350°F por 45 minutos.
•Volteamos el cerdo, lo cubrimos de nuevo con el papel de aluminio y lo cocinamos en el horno por 45 minutos mas.
•Remueva el cerdo de la asadora y reserva en papel de aluminio.
•En una olla a fuego medio agregue los jugos que quedan en la asadora removiendo el tomillo, el laurel y las zanahorias.
•Agregue la mezcla de agua y harina gradualmente mientras bates la salsa hasta conseguir la consistencia deseada.
•Agregue la mostaza dijon a la salsa y bate bien.
•Cortar el cerdo en rebanadas y echar la salsa por encima.
•Disfrutar
Bavarian Pork Roast
Ingredients:
• 4-5 lbs - Pork Roast
• 1/4 cup - yellow mustard
• 1 tablespoon - dijon mustard
• 2 tablespoons - vegetable oil
• 3 cloves - garlic minced
• 2 oz - unsalted butter
• 1/2 cup - white wine
• 2 - carrot peeled and cut
• 1 - large onion, chopped
• 2 sprigs - fresh thyme
• 1 - bay leaf
• 2 cups - chicken broth, beef broth, or water
• mix of 1/2 cup water and 2 tablespoons flour
• Get to taste
Preparation:
• Preheat oven to 350° F.
• Add salt and pepper to taste and cover the pork with the yellow mustard.
• In a pan (over medium high heat) add the vegetable oil.
• Add the pork and sear all sides. (5 minutes per side)
• Remove the pork and place in a roasting pan.
• Reduce the heat, add the onions, garlic and butter and cook for 2 minutes.
• Add the wine and deglaze the pan.
• When the wine reduces by half, add the thyme, bay leaf, carrots and the broth or water and cook until it starts to boil. (approximately 5 minutes)
• Pour all the ingredients over the pork in the roasting pan.
• Cover with foil and cook in the oven at 350° F for 45 minutes.
• Flip the pork, cover it again with the foil and cook in the oven for another 45 minutes.
• Remove the pork from the roasting pan and reserve in foil.
• In a saucepan over medium heat add the juices left in the roasting pan removing the thyme, bay leaf and carrots.
• Add the mixture of water and flour gradually while whisking until desired consistency is achieved.
• Add the dijon mustard to the sauce and whisk well.
• Cut the pork into slices and pour the sauce over.
