Have you ever considered shorter 2-3 week sessions for French students? Maybe visit fewer sites to save costs and they could use public transportation to meet at your nearest bus terminal for arrival & departure.

the triangle shaped mushroom is a grey and white mushroom, it is the Magpie Inkcap (Coprinopsis picacea). causes upset stomach and irritated bowels. and also, glove your hands when handling mushrooms you do not know. the brown clump of mushrooms looks to be the Ringless Honey Mushroom, Armillaria tabescens, they should be editable, but check locally.

May I suggest that you invest in a desiccant dehumidifier to remove moisture inside the chateau, especially your bedroom. It will save on heating costs as well as prevent mould from occurring. You can get ones of varying capacity and you will need to remove the container that collects the moisture. I use it on the garden or to flush the toilet etc. but this is Australia which feels like the world’s driest continent.

If you renovate the 3rd floor, you'll be able to receive more students. On another hand, giving the opportunity to French students to be there is also very cool. Maybe you should focus on the renovation, while integrating a few local French from your area, to reduce costs, even half/part time at the beginning and think of a more elaborate strategy and financing for the years to come.

Maybe include a few French students mixed with the ones from North America. It would be a more culturally enriching experience for the North Americans to meet some French students.

I goggled your black spotted mushroom and there is a “black top spotted mushroom” that is poisonous. Interesting statement you made about possibly mowing truffles. But I don’t believe truffles have any parts that grow “above” ground.

"become a 'real school'"? dude, these students are learning so much from this experience! no way this is not 'real'!! on another note, maybe you could do a cooler weather retreat for menopausal women! these hot flashes make it so that we don't need the heat half the time anyway.
