Here’s how to make Chandatai’s Pulav
INGREDIENTS-
-Ghee
-Cumin Seeds
-3 cups of basmati rice
-2 bay leaves
-1 inch cinnamon stick
-6-7 cloves
-4 green cardamons
-1 black cardamon
-1 star anise
-15 peppercorns
-10 green chillies
-2 inch ginger
-15g Garlic
-Handful of fresh mint leaves
-Coriander leaves
-3 Medium Sliced Onions
-3 Medium finely chopped Tomatoes
-Turmeric Powder
-Chilli Powder
METHOD-
For Rice- Use 3 cups of Basmati rice soaked in water for 1/2 hr
-Heat 2 tbsp ghee
-Add 2 bay leaves, 1 inch cinnamon stick, 6-7 cloves, 4 green cardamons, 1 black cardamon, 1 star anise, 15 peppercorns
-Add rice in ghee and sauté it well
-Add 6 Cups of water
-Add salt to taste
-Gently mix, cover and cook till the rice is done
To make the gravy paste
- Take 10 green chillies
- 2 inch ginger
- 15g Garlic
- Handful of fresh mint leaves
- Coriander leaves
- Grind these into a smooth paste. Add water if needed
For Gravy
-Heat 2 tbsp ghee
-Add 1 tsp cumin seeds and let it splutter
-Add 3 Sliced onions and cook till it is brown
-Add the paste to the onions and sauté well
-Add 3 medium sized finely chopped tomatoes and cook until it is mushy
-Add 1/2 tsp turmeric powder and stir well
-Add vegetables into the masala
-Add 1 tsp Garam Masala
-After the rice gets cooked, remove in a plate to cool down.
To assemble the Pulav
-Spread a little rice and then the gravy onto it
-Put 2nd layer of rice and the second layer of vegetables onto it
-Add 3rd layer and so on.
