Soup isn't usually a meal for me, but when I heard that sumo wrestlers make chankonabe to bulk up. I knew this was the soup for me. It's full of fresh vegetables and meat, each with it's own unique flavor. Chanko Nabe doesn't have to bulk you up, it's all in the portion size!
Ingredients:
1.5 Quarts Low Sodium Chicken Broth
1/4 Cup Soy Sauce
2 Tbsp Rice Wine Vinegar
2 Large Carrots
1 Small Daikon
1/2 Head Napa Cabbage
Bok Choy
Baby Bella Mushrooms
1.5 lbs chicken thighs
1 Tbsp Ginger
1 Tbsp Garlic
Enoki Mushrooms
Soft Boiled Eggs
Udon Noodles
