Charred Mango Tomato Chutney & Ragi Roti
Just whipped up a deliciously healthy meal of Charred Mango Tomato Chutney & Ragi Roti 🌿🍅 Ragi (finger millet) is a nutrient-rich grain that is packed with calcium, iron, and fiber. It's gluten-free, easy to digest, and perfect for anyone looking to add some extra nutrition to their diet.

Ingredients:
1 cup Ragi Atta
Salt to taste
1/2 cup warm Water
5 medium sized Tomatoes
1 Raw Mango
White Sesame Seeds (to dip roti)
1 finely chopped Onion
1 finely chopped Green Chilli
Finely chopped Coriander
Red Chilli Powder (as per taste)
1/2 tsp Jaggery Powder
Method:
In a mixing bowl, take 1 cup Ragi Atta
Add Salt to taste
Add 1/2 cup warm Water gradually
Knead a soft dough
Cover the dough and rest for sometime
Further take 5 medium sized Tomatoes and 1 Raw Mango
Place a wire rack on gas flame
Roast tomatoes and mangoes on it until charred
Let it cool down
Further roll few balls from the dough prepared
Dip the ball in Safed Til, dust some dry flour on it
Start rolling thin with the help of rolling pin
Heat the pan to roast roti
Roast both sides by pressing the roti
(You can also roast it on direct gas flame)
To make chutney, remove skin of charred tomatoes and mango
Cut it into pieces and coarsely crush it
Transfer it in a mixing bowl
Add Salt to taste
Add 1 finely chopped Onion
Add 1 finely chopped Green Chilli
Add finely chopped Coriander
Add a little Red Chilli Powder (for colour)
Add 1/2 tsp Jaggery Powder and mix it well
Take Roti and Chutney on a serving plate
