Lobels of NYC is an excellent seller of prime beef for when you really want it to be special. It doesn't come cheap, but as they say, you get what you pay for and you won't be disappointed. Great job helping that tenderloin realize its full potential T-Roy.

One of the best food videos I have watched, and I've watched hundreds. It is THE best on chateaubriand. I cooked this today for Christmas Eve for three adults who are world travelers. They raved about it. Thanks for making this complicated dish so simple.

Since this cut of meat is price-y, I think this would make for the perfect meal for a special occasion. What a classic dish throwback! This was popular in the 50's to 70's then fell out of favour to big t bones etc. Ive always love Chateubriand( and you nailed it Troy) goes great with another classic potato dish, Potatoes Anna(which is a bit of work so normally I just do a great scalloped taters). If you get the whole tenderloin, and carve it, you get a small (petite) roast, the chateuabriand, about 6 tenderloin steaks, and a honkin good amount of great stew beef, really economical! Merci!

It doesn't matter the quality of wine when using it for cooking because you normally burn off all of the alcohol. Just a tip for the future

+sam the man I have found that some of the cheaper quality wines have an "off" vinegar flavor. There are some wonderful 7-10 dollar wines that are great for cooking though. Thanks for your input Sam!!!

+sam the man Alcohol is alcohol. Its the same in any kind of wine. And as it evaporates it does not make any difference for the flavour. The difference between a cheap and drinkable wine therefore is not the alcohol, but the other ingredients. After all, those make up almost 90% of your wine, and dominate the flavour. So there actually is a huge difference between cheap and drinkable wines for cooking.

That sauce is almost identical to how I make my sauce for my beef stroganoff. I add a table spoon of AP flour a few minutes after the mushrooms, 1.5 cups of creme fresh instead of heavy cream and use a cooking sherry. You rock brotha!!

Looks like they got a quality service worked out at Lobel. Convenient 'n all. Damn if I don't wish we had the beef prices you fellas have in the 'states here in Finland. Good recipe, too. Simple. I like it how the recipe practically leaves the beef to represent itself instead of overdoing the flavouring, manipulating and saucing that tends to often happen with French classics.

My grandmother (who was French) taught me how to prepare her 'real" French Chateaubriand). Anyway, she eschewed the use of garlic with tenderloin, feeling that it dramatically alters the cut's character, something with which I personally tend to agree. Anyhoo, this is basically it: Everything you did in this exceptionally well produced and narrated video (but, without the garlic). Before starting, however, we want to prepare a paste of unsalted butter, diced parsley, and fresh lemon juice, making sure that the lemon juice is well-incorporated with the butter. Set that to the side for later, but use about 3-4 tbsp. of it when pan-searing the meat. Then, getting back to your technique we roast the tenderloin in the oven to a temp. of 118-120 F. (the reason for the low temp is because, as you'll see, this baby's going back in the oven for the finish, and we don't want the meat to over-cook). While that rests for about 25-30 minutes, make your sautéed mushrooms (and, if you like, cartelized onions). Then, after it has rested, carefully carve the chateaubriand about 1/2-way through, making filet mignon-sized slices for each serving, generously spoon-in the paste between portions and on top, then place back in the 325 F oven for JUST long enough for the paste to melt. I usually serve with twice-backed cheddar/gruyère/parsley potatoes and blue cheese infused Yorkshire pudding/popovers. Enjoy, then sit back and relax while you wait for your very own, personalized, cardiac infarction as this meal, I believe, truly warrants the description "To die for!" :)

I just got back from South Carolina seeing my Daughter's and Son and their Spouses and 8 of my 12 Grandchildren, what a week!! An absolute blast, still tired from it all, went back to work today but I feel I needed a day or so to recover from it all. +Mi Casa BBQ Thanks very much for watching. It should work great on your Weber, plus you can get a little added layer of flavor if you add just a touch of smoke to the coals. Just sear all sides over direct heat, then move it over to indirect heat and finish the cook like I showed in the oven. I bet it will turn out fantastic on the Weber!!!

Made this tonight and I am so grateful for this recipe. It is now one of my top 3 gotta impress, and favorite flavorful options. Good meat is not cheap, but this meal is totally worth the expense and 2 hours needed to make it. I don’t think I will wait a month to make it again. Any tips on how to reheat the small amount of leftovers?

Spot on buddy..the whole way through... Nothing better than Alberta beef though for that. I know...I deliver truck loads to the best steak houses in the US . They have my Canadian licensed truck park a few blocks away so customers think its home grown lol. Go Canada beef Go !!!

One gorgeous piece of beef! Gravy looks good, too. However, I do my tenderloin this way: allow to come to room temperature; place in warm oven to bring meat to 120 degrees (probe center). Next, start with cold pan: place beef in pan and raise to high heat to sear. Check temperature for your liking of doneness (medium rare for us) and pull out of pan. Let rest. Never that grey outer edge to the beef and absolutely delicious. We get to the same place with the meat. But you get the gravy!

sjalots,garlic, carrots, sellery,thyme,rosemary,extra butter,pepper and salt is what I ussualy add when putting it in the oven..now and then I open it and use the juice toput it over the steak...

Hi Jason, my mouth was watering while I was cooking this dish! LOL I was using a skillet made by Demeyere. It is the Industry line that we have. We have the full set and they are the best pots & pans that I've ever had the pleasure of cooking on. Well worth the money!!

Very nice.... Reminded me of the great meals I had growing up in France. Moved from NY to Texas (Austin) 5 years ago and finally got my WSM, just in time for the holidays. First smoke next week! Any advice on what I should start with? As you say, "Pork Butts are very forgiving" but not sure this would be the right meat to start with. Thanks for posting these videos and sharing your passion for food!

Thanks Eric, glad you enjoyed the video. Those French do know how to cook!! I'm glad you got a WSM. It will take 4-5 cooks on it before you are really able to set it and forget it. When it's new, the temps will fluctuate quite a bit because it doesn't have that carbon built up on the inside. For a 1st cook, I'd go with something that is a shorter cook like chicken, pork roast, or pork ribs. After you get the temps to remain stable for hours on end, then you can do those longer cooks like pork butt or brisket. I'm in Austin also, up near Cedar Park. What part are you in?

I will check your channel for a recipe. We live in Southwest Austin (by SouthWest Parkway) but my father-in-law lives in Cedar Park, so we go up there regularly.

Eric Grodziski Cool man, if you are up this way, swing by and say hello!! Oh, on the WSM, I always cook with the top vent fully open. When getting it up to cooking temp, all vents are fully open. As I approach the cooking temp I desire, I will close down the 3 bottom vents to about 1/4 inch or width of a #2 pencil. Sometimes, I have to close 1 of the 3 bottom vents to keep temps down to 225F. Also, lump charcoal burns hotter than charcoal, especially Mesquite lump. Have a wonderful weekend Eric!!

My mistake to not trusting my thermometer. I did exactly how you showed in the video, but after 25 min. The core of the meat was about 45 degrees Celcius ( roughly 100 Fahrenheit). I than put back into the oven for another 20 min. Ooooops lol...oh well next time I am sure I will succeed. I will see more of your videos and tell you how I did. For now, have a great new years holidays! GUS

. . . a chateaubriand is just a double-thick (2 - 3 inches, approx. 12 - 18 oz.) piece of filet mignon which is cut thru two thirds and then flapped open, so that it presents double the size for roasting and usually is served for two persons . . .
