This potato recipe is perfect for fasting as its super easy to make and need just a few ingredients. Or you can also eat it anytime as a light and healthy snack as I have also added lotus seeds and peanuts. You can eat it with yogurt, green chutney, ketchup or any sauce or just have them with chai. So do try it at home and enjoy this easy recipe.

Ingredients:
2 big Potatoes (boiled, peeled and cubed)
1 cup Makhana (aka Lotus Seeds)
2 tbsp Cooking Oil
1 tsp Jeera (Cumin Seeds)
¼ cup Peanuts
¼ cup Green Coriander (chopped)
½ tsp Red Chilli Powder
2 tsp Coriander-Cumin Powder
2 tsp Amchur Powder (Dry Mango Powder)
Salt (according to taste)
Instructions:
1. First I have boiled and peeled 2 big potatoes. Now cut both potatoes into medium size pieces. We want medium size potato pieces as they are easy to eat and also taste better. Once all potatoes are cut lets go to the next step.
2. Now we will roast peanuts and lotus seeds, so take a pan and add 1 tbsp oil on medium high heat. To make it even tastier you can also use ghee (clarified butter) for frying. When oil gets medium hot put heat to low and then add peanuts. Now roast them for 2 mins on low heat. After 2 mins add lotus seeds and roast them for approx 6-7 mins till both of them become crispy. We started with peanuts first as they take more time to roast then lotus seeds.
3. After approx 7 mins they are roasted well so take them out in a bowl, we will use them later in the recipe. Now put heat to medium and add 1tbsp oil in the same pan. When oil gets medium hot, add 1 tsp cumin seeds and stir a little. Once cumin seeds are fried put heat to low and add potatoes, ½ tsp salt, I am using normal salt but if you are making it for fast you can also use sendha salt, then add ½ tsp red chilli powder, 2 tsp dhaniya-jeera powder, 2 tsp amchur powder for tanginess and finally add roasted peanuts and lotus seeds. If you don’t have amchur powder you can also use 2 tsp lemon juice.
4. Now mix all ingredients well so that all spices blend well and cook them on low heat for 2-3 mins without covering. Just give it a mix in between.
5. After approx 3 mins, at last add chopped green coriander and give it a light mix.
6. Now our spicy and delicious aloo snacks is ready so take them out in a bowl and enjoy.
Tips n Tricks:
1. If you want it more spicy you can also add some green chillies.
2. To make it even tastier use ghee (clarified butter) instead of oil for frying.
