Here in Yucatán península we make "buche relleno" wich is something similiar with olives, raisins, spices, capers and cooked eggs inside the stomach !

If you think about it in the grand theme of things, the stomach isn't much different than using natural casings (aka, the Intestines). It is just way larger and you'll have to clean and prep it yourself instead of it already being done..

Eric you found something Cajun I never heard of. Being Cajun but from central Deep South Louisiana we didn't make this sausage. It looks good though and I would try it. This sausage proves us Cajuns will eat anything. LOL

Gotta say this one threw me for a loop. Unusual for sure. Where I buy my freezer beef I always keep the heart, tongue and liver. Never thought about stomach sausage. Thanks for expanding the vision :)

I'm from south Louisiana. I smoked 4 pounces and 100 lbs of sausage over the weekend. Didn't put all them vegetables, though. C'est bon!

I have the smeallest smokin it smoker which I love. I just threw a party and smoked four pork butts for pulled pork but couldn't do them all at once. They couldn't have been better. I only wish I would have purchased a larger smoker and one with WIFI. Thanks for all you do.

As much as I would like to make this recipe the wife said HELL to the NO and walked at a very wabbly fast pace out of the room.. LOL. I see nothing wrong with it myself and told her that she love my sausage made with natural casings. You know how that went.. LOL. Reminds me of the joke about the cowboy eating cow tongue and a lady asked what was he was eating. he replied and she said no way she would eat something that came out of a cow's mouth. He asked what are you eating and she replied with eggs.🤠

Hi Eric and thanks again for this new video, a bit surprising from here down in France as a roux isn’t made out of oil but butter, but why not oil even though it doesn’t look very appetizing lol Chaudin is actually a part of the intestin used to make andouillette for example but mostly known for saucisson sec, as saucisson sec isn’t made out of an artificial casing…. La panse is the correct word for stomach and this can be very delicious… last little trick if I may, to avoid explosion during cooking, it’s like for black pudding and so on, the temperature musnt exceed 85•C…. Are you gonna do haggis too ? I d like that 🙏🏻

Lol. Some of the comments about the stomach cracks me up. No problems biting through casings (intestines) that had fecal matter passing through them but hell to the no for the stomach that only received matter coming down the gullet!😂 Hot dogs must cause them to gag because of what's put into them. 😊 Pretty sure SHTF scenarios will help them change their perspectives.😅

Nah...see I do have a problem with natural casings lol they gotta be snappy and not chewy lol 😂 here in Puerto Rico, they eat the intestines,chopped up with plantains. I mean I tried it..but wasn't a fan 😂

I'm sorry but Haggis does not have stomach as part of the grind, the stomach is merely the container. The content is "sheeps pluck" consisting of sheeps esophagus, lung, heart and liver, good luck finding that in USA thanks to the USDA FSIS , along with beef suet, oatmeal, onion and spices. The pluck is pre-cooked before mixing with the other ingredients and then stuffed into the stomach which is then boiled to cook all the ingredients together.
