During my trip in Chechnya I met many very good, kind, amazing people. We became friends with Ibrahim and his wife Aisha, who every day tried to help us and even treated us with baklava or Chechen siskalsh pies, which we all enjoyed a lot.
That's why we asked Ibrahim to let Aisha cook such pies for you - to share the recipe.
To make such pies, as in the original, you will need corn flour, which may not be found everywhere. And let's try to replace it with ordinary, wheat flour? Or here... rye! Exactly - replace cornflour with rye, this is a very good idea, because rye flour behaves very much like cornflour!
You will need heated kefir, a couple of eggs, some soda and salt. And I am telling you for sure that everything will work out!
For stuffing with herbs, ramson and nettle were used, and dry sheep fat was added to them. But you can use any possible alternative from the products that you have. I would take green onions, some fragrant, savory herbs to my taste, that I would steamed or boiled slightly, added a little butter, or even chopped boiled egg. I am telling you for sure - it will also turn out very tasty! And if you find ramson, which grows all over Russia, and in Siberia - will be even better!
After that you knead dough, as shown in the video, roll balls with greased in oil hands, flatten them in the palms of your hand and put the filling. Roll the dough first as dumpling and then flatten it so that the seam is on top.
Fry in fat or vegetable oil.
