I have noted down the recipe for this ingenious poppy seed cheesecake here.
First, preheat the oven. For fan ovens, 170°C is enough, but I switch to top/bottom heat after 30 minutes so that the cake doesn't turn black. For top/bottom heat, preheat to 180°C. For more detailed information, see the video.
For the dough you need:
200 gram sugar
150 gram flour
150 gram blue poppy seeds
200 gram butter (at room temperature)
3 eggs and
1 sachet baking powder
Mix everything with a mixer and spread into the prepared baking tin. A springform pan with a diameter of 28 cm is the right size for this recipe.
For the topping, which hides while baking, you need:
50 gram butter (at room temperature)
150 gram sugar
1 sachet vanilla sugar (or vanilla paste)
1 sachet vanilla pudding (custard)
2 eggs
2 tablespoons lemon juice
1/8 litre milk
500 gram quark (for making quark see instructions below)
Mix everything together and pour onto the dough.
Bake the cake for 60 minutes and then leave to cool on a cooling rack.
This cake is particularly suitable in warm weather or for a cake bazaar.
Quark is indispensable in German cuisine. If you live in an area where you can hardly buy quark, you can make your own. There are several how-to videos on KZitem that you can watch or just follow these steps:
Pour 2 liters of buttermilk into an ovenproof bowl
Place the bowl in the oven and heat for 2 hours at 100° Celsius
Leave to cool for 2 hours
Place a clean cloth in a colander on another bowl and pour the mass into the cloth
Drain for 6 hours and at the end gently squeeze the cloth
