You both should get yourselves a dehydrator so as to make "sundried" tomatoes🍅 They are fantastic on everything. The also work great for herbs🌿

@@jodrew1845 I use a tomato press when I make my sauce and I dehydrate the skins and seeds that are left to make tomato powder. I use that to thicken other sauces or add tomato flavor to stir fry or whatever else I want to. I have done slices of tomato too and used them in sourdough bread, so good.

I can't go back to my college days of just cooking pasta and pouring (store-bought) sauce over it anymore. I have to finish cooking the pasta in the sauce whenever I can. World of difference.

I like the idea for cooking the pasta in the thin sauce but what makes it thick is the starch it releases. Cool idea but not good for your heart...none-the-less...live life...its a one time thing.

@@cisium1184 i guess its linked to higher risk of diebetes, weight gain and heart disease. I see that its worse then sugars in some cases. But, sugars are not my health problems...so im good there. Thanks for making me look into it alittle deeper. Im definitely going to make this sauce.....i grow my own tomatoes so im half way there. Have a good one.

I never strain my sauces. I take a blending stick to it & pulverized it. also, I add only salt, no other herbs. this way I have more options on how to use my sauces . I freeze it in bags for future use.

This year I canned over 150 jars of tomatoes. I did some stewed with skin and seeds. I will put in Vitamix when I use it. The sauce I pureed it all raw and cooked it down until thick and then filled my jars as sauce was boiling, thus avoiding re-boiling the jars. There was no waste and all the nutrients will be left in the sauce. It is so delicious and fresh tasting in any pasta dish! Vitamix is the best tool in my kitchen!

It's also matter of finding something to do with the literal tons of tomatoes you've got from your tomato plants (of which you mistakenly thought 5 was a good number).

Cut them into quarters or halves, based on size, lay on sheet pan and freeze individually. They can be bagged, once frozen, and used as needed in cooking. Bonus--let them thaw just a bit and the skin peels right off!

tomatoes are pretty easy to grow, i literally put seeds from one tomato in some dirt and a year later got a huge plant, though you might want to put in a little more effort than that :)

@@supernautistaken 😮 it shouldn't take a whole year to grow. I start seeds in March or April and tomatoes are ready to pick in July or August depending on the species. I live in Illinois though so it may depend where you live.

I have spent a good portion of my time for the last couple of weeks making fresh tomato sauce and soup. I have four tomato plants which have grown to gigantic proportions and are still covered with more tomatoes than I would ever have imagined hence the sauce and soup production. I do a very similar process to Food Wishes and pack the sauces/soups into plastic bags to store flat in my freezer. Thanks Chef John for this video. For anyone who has a bumper crop of tomatoes, this is a great way to preserve those precious tomatoes and have delicious sauce and/or soup for the entire winter.

Chef John, having had a large organic garden, too much production to do your beginning steps, so I just got fed-up, (pace nonna), and as the excess bumper-crop tomatoes ripened, I just tossed them in a bag in the deep freeze. Then later, when I needed them, just defrost in a bowl, the skins then come off easily, put the tomato water and pulp in a blender, and proceed to make sauce. I think this method preserves more nutrients, color and flavor, than cooking twice, just my opinion, your sauce looks good. Buon appetito!

There is an heirloom Amish to.ato called the Brandywine. It was described to me by the elderly owner of a large greenhouse as the ugliest, but best tasting to.sto you'll ever grow. It's a kidney shaped fruit that comes in red, pink and yellow with just a thin layer of seeds under the outer edge with a meaty center. Really good!

In fact, that's more or less what I did yesterday for lunch. The differences being that I added the slices of garlic but then I removed them when they went golden. Then I added some chopped onion and leek, as well as some slices of carrot, gave them a while to start to soften and them added a whole lot of tomatoes (the pan got almost full) and went from there. I added some finely chopped garlic, cayenne, freshly ground pepper and a bit of paprika. I let it simmer for a long while and, as I was going to do some fresh pasta, I thought it would be stupid to boil water, which would take way longer than its cooking time. So I added the pasta to the sauce when it was still a bit more "watery" than I would like, cooked the pasta, and that's it.

@@lynnwilhoite6194 What can I say? I liked it. The other person who had it said it was nice, although a bit too hot, but I do not think they were. You know what, I find that most of the times, recipes are there to give you a step by step but you can change whatever you feel like at any time and it will still work. Of course, those changes have to be made knowing what you're doing but, for example, I did what I did with the garlic because I like the flavor, but I don't want to bite the garlic itself, and I was not going to put the sauce through a sifter. And with all that said, I mean: I liked it, but you don't have to follow my recipe and, in fact, next time I will surely do something different. That's what I like about cooking.

My mum had a food mill. It was great for getting the skins and seeds out of tomatoes, apples, all kinds of stuff. Funny though, she always blanched her tomatoes and peeled them before chopping them up. I wish there was Food Wishes in the 70s and 80s. Heck. Even the 50s or 60s.

Hi chef john once i simmer the tomatoes down i keep skin and seeds in and blitz in food processor. Smoothes out texture and thickens up. You can also puree the raw tomatoes before simmering if prefer. You should also try roasting tomatoes in oven vs simmering. Get more intense flavor. Love the video. Happy gardening!

Over the past couple weeks I've been gathering 2 or 3 beefsteak tomatoes from my garden each day. As i pick them, i drop them into a freezer bag and freeze and keep adding until the bag was full. Today, I took them from the freezer then dunked each one, for a few seconds, into a pot of boiling water, keeping the tomato on a spoon as it is dunked. The skin just falls off very easily. I transferred the skinned tomatoes into another pot, added some of my fresh basil leaves from the plant I have growing, and simmered for an hour. It was heavenly on the nice pan of cabbage rolls I made for supper tonight. Each time I need sauce I just grab a bag of tomatoes from the freezer and make garden fresh sauce each time. I cant stand to eat canned sauce any more, there's no comparison.

My Dad grew tomato's for the first time this year (hierloom's), and OMG I cannot understate just how much better they are than storebought. My brother made a salad with them, olive oil, basil, and garlic, and it was heavenly.

Iv been making this for years , I think the fresh tomatoes are a much better flavour, and yes after watching goodfellas I slice garlic with razor blade , your tomato’s look beautiful, I have to go to farmers shops and markets , iv tried growing them , I can’t get rid of pests, and don’t like using all the chemicals .

Love this recipe, and it is so close to my own. I roast my garlic and add it after I add the tomatoes, and instead saute red onion or shallot prior to adding the tomatoes. I will also sometimes make my tomato sauce "rustic" by not straining and using a food processor to smooth it out, and leaving slivers of skin in the sauce.

Hey Chef John! Have you ever had a Caesar before? It's our national cocktail up north in Canada. It's a bit like a bloody mary but with some clam broth and lots of worcestershire and tobasco. It's wonderful when you've got some fresh tomatoes in season. Highly recommend.

My late mother used to make "Tomato Juice" with this exact procedure. Differences: Mom added chopped onion (4 x medium-large), 1 c chopped celery leaves, 4 bay leaves, white sugar (3 Tbsp for 6 qts tomatoes), same amount of prepared horseradish, plus 1/2 c lemon juice after straining. I'm not a big fan of V8 or other commercially produced tomato juices, but this stuff is AMBROSIA. I tried it myself a few years ago and got about 4.5 quarts of juice out of 12 quarts of chopped tomatoes. I'm gonna try using some to make the pasta dish you suggest

@@bigfatchubbybritboy9445 There's an old French recipe for "health soup", a sort of pick-you-up or hangover cure. couple hand fulls of sage leaves and a whole head garlic, cloves separated but not peeled. Boil, cook, push through strainer and drink. Seriously try it ! Taste completely different !

Just like potatoes most of the nutrients in tomato’s are in the skins so instead of straining your sauce you can slow simmer and Emulsify the skins into the sauce

This is perfect! I'm picking about 2 and a half pounds of fresh Romas from my garden every day and was sick of peeling them to make marinara. This will save time and use some of this stuff up in a way that is delicious and quite useful. I can make this in a couple of days and freeze it for the winter.

Different varieties will produce unique and subtle changes in flavor. What really sets homemade garden tomato sauce apart is starting with a fruit that is fully ripened on the vine. Farm grown tomatoes are picked earlier in the season, which makes them resistant to bruising during shipment, at the cost of sweetness and depth of flavor. If you commit to your own backyard tomato garden, it wouldn't hurt to raise a basil plant as well, since store bought herbs also tend to lose flavor in transit.

You can freeze it for 17 years

It's too good, you won't be able to keep it at all. Cook rice in it then lots of olive oil and parmesan. So unbearably good.

Freeze it in ziplock bags. Problem solved.

I made a batch of this 3 years ago, processed the mason jars in boiling water for a while, and they have kept unrefrigerated so far.
