candied lemon & pickled shallot recipe for those who asked ⬇ candied lemon: blanch lemon peels ~6 times. when you blanch, bring up to a boil with cold water, dump, and then refill with cold water (do that 6 times). this will help take out the bitterness of the lemon. Then you cook it low and slow in a lemon syrup (equal parts sugar and lemon juice, made by dissolving the sugar in the juice). take the blanched lemon peels and cook in the syrup for ~5 min until it's translucent. let the mixture cool till room temp and store in the fridge--stores for a *very* long time pickled shallots: it's a 9:5:3:1 ratio of rice vinegar, water, sugar, salt for your pickling liquid. bring that mixture to a boil, then pour it over brunoised shallots. cool & store in the fridge--also lasts for a *very* long time.

I’ve always been told you add salt when the beans just start to become tender. The thought is that the salt will make the beans tough and take longer to cook. Guess That advice is not accurate.
