The nuclear sizzle is not hot enough. The water should ball up like mercury. A steam barrier forms letting the water glide across the pan.

Laser thermometers do not work well with reflective surfaces like stainless steel but they work well with black cast iron pans.

If preheating a pan on a high heat , and you are not sure of it's temp. adding oil may not just ruin the oil , it may instantly be on fire .

No, you never season a stainless steel pan. Only carbon steel and cast iron has to be seasoned. With stainless steel it's all about temperature. And I'm afraid that this guy has got it wrong... Water that sizzles and evaporates means that the pan isn't hot enough - your food will stick and cause a mess. When water "explodes" into a multitude of particles it means that the pan is too hot - your food will burn. When the water forms into a single droplet that acts like a pinball, then the temperature is right.

The water sizzled off immediately which means the the pan is too cold. The "nuclear effect" is not a real thing. When the water beads in many balls, it's too hot. It should ball in a large ball and dance around in the pan at the correct temp; the Leidenfrost Effect. That's when you add your oil or fat for a non-stick surface. This "chef" doesn't know crap. 45 minutes to caramelize onions??? Please, no one listen to this "chef"!!!!

Place the empty pan on the burner and turn the knob to the 4 o'clock position. Wait 1 minute and stick the back of your hand about an inch from the bottom of the pan. If you think it might be wise at that point to take your hand out of the pan , it's ready for oil. Add oil, turn the heat to medium and cook away. 3:26 - no, it doesn't take 40-45 minutes to caramelize onions. It's more like 10.

Hate to be a Debbie downer but this is the worst video I have ever seen on how to tell if the pan is hot enough to cook with...I.E. mercury test....not having the water totally boil out when dropped into the pan
