I would love to see one of these videos where the Normals plan their dishes and assemble the bag and then Ebbers has to make the three dishes with no planning; I feel like that would be closer to us other normals buying whatever we think we'll need and then trying to figure out how to best use the stuff we would usually buy.

My version uses puff pastry. Essentially I wrap whatever I have leftover in puff pastry. My theory with leftovers, when in doubt, pastry it out! 😊 Works 99% of the time. Even with more liquidy dishes, I thicken those up with instant mash potatoes.

Same! You can tell they’ve learned so much. These days they often win challenges against the chefs because they’re at such a high level of cooking ability. Obviously they have the food team coming up with recipes for them but they’ve now learned the skills to be able to do them justice.

I would love to see the guys do a "yellow sticker" or clearance food challenge. It would be great to see your take on using commonly discounted food. I feel like it would help with your ethos about lowering food waste and helping people save money. Also to not just clear a clearance section which other people may use/rely on, you could always see what is discounted and then buy the full priced units on the shelf.

Oooh that's a good idea! It will be lots of "fresh" stuff not so fresh anymore: veggies, bread, dairy, meats, pre-mades... BTW some of he properties of ingredients are different fresh vs clearance so if they buy them fresh, they need to wait around a couple days. Think of a fresh bread with crispy crust and fluffy inside vs chewy/hard crust and dry inside... french toast from a fresh bread becomes soggy easily while stale bread becomes delicious😋

@@SteelcryoI think it's more of a matter that he knows that Ben's role in this vid is to challenge him and Jay, but to also show us at home how Sidekick is great, because of the quality of the recipes/dishes you make. It's the implication of each of the dishes being "so much better" than what Mike and Jay made that somewhat irks him, and Ben saying "Sorted!" after each of _his_ 3 dishes is like insult to injury to Mike. It isn't really a matter of "the normals screw up 3 dishes, and the cooks show how it's done" anymore, but it definitely _was_ at one point, and Mike still wants to be better than he is now, (i.e. how good Ben *is* right now.) He's obviously not really upset, or hating it, more like he wants to be better and can joke with himself (and everyone else) how big the gap is between the normals and the trained chefs.

A request: Many of us would like recipes where the 2nd portion can be frozen for later. Having a freezer well-stocked with homemade meals (or components) is a joy, but not all dishes do well after being frozen. It’d be great if some of these challenges had the added requirement that it must be freeze-able, or they must use some frozen homemade leftovers! Thanks for considering!

I've found that almost every cooked ingredient I've ever eaten has frozen perfectly fine. Literally the only thing I don't freeze is raw veggies. In my house the freezer is about to burst and the fridge is mostly empty and my food always tastes great

I recently downloaded Sidekick and it’s genuinely made my life so much easier. I’m a good home cook but when it comes to the quick midweek meals I had run out of inspiration for things that were interesting yet didn’t take hours. I love how much money it’s saved me already, the lack of food waste is incredible and the meals are absolutely delicious. As someone with ADHD who struggles to plan, and easily gets bored (like Jamie!) this just takes all the thinking out of it. I just buy what it tells me to buy and then cook it step by step, but with the boredom of making and eating the same things week in week out. Thank you so much guys!

When I make stuffed mushrooms, I usually dice up the stalks and add them to my stuffing mix. Voila, zero waste! And it continues to blow my mind how popular air fryers are, when the convection oven's been around since the '40s.

convection ovens have been around for a long time but at least in the US I have never seen one in an apartment or other rented accommodation. They are generally considered a luxury for home owners as well. So for renters air fryers are kind of novel. I personally don't get the air fryer thing, takes up way too much counterspace. One thing to consider from an American perspective is that our energy prices have always been lower than Europe and the difference in costs have gone off the chart since Russia invaded Ukraine.

If so much of our cooking focuses on "never having to turn the oven on"-- wouldn't it be better just to... have a better oven, and stop cluttering your counter with oven replacements?

@@nicolad8822on some ovens there's a button with a fan on it. That's the convection oven and it's quite literally what an air fryer is. Advantage of the convection oven is that it's bigger. However an air fryer is smaller so it takes a bit less time to heat up. Personally if I have space for an oven I'll use that as I have yet to find a single home without the convection setting on the oven. Not buying an appliance just to get a smaller version of something I already have, it works fine when it's just me and it doesn't force me to split stuff up if I have guests over

You’re probably sick of hearing it but it’s easy enough to sub out the proteins in most dishes for alternatives you enjoy. If you’re a fan of spiced and heavily flavoured cuisine Pakistan and Indian cuisines actually have a massive amount of vegetarian dishes due to the cost of meat. Not just dishes where meat is swapped for protein but where a vegetable or legume is the star. Granted that’s not sorted 😂 but there’s a lot out there

I love this type of challenge, but I do truly feel that the food team and/or Ben knows what is in the bag, helped design the bag, and that gives them a head start on planning. I would love the "Normals" to get a bag of groceries and give them to Ben and Kush sight unseen and have them design meals around them.

Absolutely love this and some amazing ideas for my mid week meals. One food waste hack I would add is when making your stuffed mushrooms, finely dice the mushroom stalks into your filling mix and it adds bulk to your filling mix while removing the potential waste, all while adding even more mushroom flavour. Win win win

I miss the recipe videos, and I know that's mostly moved over to Sidekick (which I do use), but it's nice to get the extra context of hearing why a chef would do things a certain way. Sidekick handles the 'how' really well, but it's hard to get across the 'why' without these videos.

Really good job guys! To cut the food waste down almost completely, peel the potatoes and make ‘potato skin chips’. Once peeled put them in water for around 30 minutes and then dry completely. Place on a baking tray and season and add some oil. Put in an oven for around 12-15 minutes. Then you have crispy, light puffed chips! 😊

Okay this is by far my favorite episode. I grew up shopping grocery ads, and thus learned how to turn nearly any selection of food into a dish real quick. My mom wouldn't have any waste in the house, for good reason. It would be really cool to see the guys have to shop from just ads and do this, but either way I love watching the chaos. Chef's challenge idea for the normals.. Station Swap challenge. each side is a station, mise-en-place, Stove/Hob, electric appliances. (plating, possibly fourth?) Put the pantry shelf back in place to limit space and "station-keeping". they have to 1. Agree on the menu beforehand, 2. NO PASSING DIRECTLY AROSS OR THROUGH THE SHELF. Have to pass anything from one to the other in a chain, fire bucket style so when station A finishes cutting carrots, the station B has to stop for a second to pass the carrots to station C for them. 3. swap stations clock-wise whenever a "chime" of some sort sounds. (like pass-it-on but per station, "ring around the rosy" style) and 4. If you include a plating station, the plater must NAME each dish and call it out like serving at a restaurant, followed by the word "SORTED!" (in honor of bringing back the old callout in recent episodes and instead of the usual "ring the bell" as used in burger challenge, etc.)

This is my favorite episode of this series! I want to try and make all of the dishes: both Mike and Jamie's and Ben's. It looks so simple and smart and doable. I don't have an air fryer but I have a smaller tabletop convection oven thing I use all the time and I can't wait to try. My favorites were the mash with sprouts, the stuffed mushrooms and polenta, and the chicken and sprouts pasta dish! Great job everyone!

The first chef's recipe (sprout-mash) is very Dutch! Throughout the winter, the Dutch eat A LOT of vegetable mashes ('stamppot'), often served with sausage and/or bacon or some otjer form of pork. Kale-mash is probably most famous, alongside onion and carrot mash, but you can also find endive mash, sprout mash, and many other varieties!

I like this concept, but it also gives the chefs time to prepare. I'd love to see a battle with this format where the normals face a chef (Kush or Ebbers) where the other chef provides a bag of groceries and they must come up with dishes on the fly at the same time as normals.

Mike and Jamie did brilliantly! Feeling oddly proud for/of them that what Ebbers came up with was so similar. I enjoyed the fact there were more normal ingredients, which made the task more realistic in my view. The only thing I thought was a bit unfair was that they don’t (seem to) get planning time and are thrown straight in. Though I appreciate the format is maybe kept that way to encourage a bit of entertaining chaos 😊

i would love to see something similar to this but a normal and a chef vs a chef to see if the the chef can improve the end result or if the normal holds the chef back maybe jamie and kush

Don't forget to include those alternative directions. Not just for people like me who don't have an air fryer, but also for ingredients you might have already waiting in your fridge, like an egg or yoghurt or mayo for attaching breadcrumbs. Or that if you don't have breadcrumbs, you can just drop chicken straight into flour for frying.

another great use for mushroom stalks: boil them in a cup or so of water until the water is black, then remove the stalks, chop them up super fine (basically mince them) and add them back in. Makes a delicious rich mushroom stock that can be added to sauces, I like to add it to a roux to make a sort of mushroom veloute, a friend of mine adds milk or cream to make a really quick and easy creamy mushroom soup, but it also adds richness and earthiness to saucy dishes like a bolognese.

I made a similar stuffed mushroom dish yesterday - I didn't want to throw the stalks away, so I finely chopped them and added them to the chicken stuffing. This way the mushrooms were fully used. Ben's suggestion regarding other dishes is great, but I personally never think that far ahead 😅

When it comes to putting veggies in mashed potatoes, swedes been doing that for a longtime. We have something we call Rotmos which is potatoes cooked & mashed with carrots & rutabaga with some vegetablebroth, butter & then some blackpepper & salt. Often served with rimmat fläsklägg which is a typ of salted pork.

An air fryer is just an oven with a convection setting that preheats a little quicker, if you already have such an oven the 'energy savings' part of the argument only really begins to balance out after the lifetime of the air fryer itself as you're paying an upfront cost rather than an ongoing one. If you have neither, get an air fryer. If you have an oven already that has a convection setting, skip it.

@@KillinTime2792 The speed of heating up the air fryer is just such a big quality of life thing that you don't notice until you've got one. If I pull a handful of french fries out of the freezer and toss them in the air fryer, they're ready to eat in less time than it takes for my convection oven to preheat. And if you live somewhere with warm summers, you'll appreciate not having to turn the oven on.

We do something similar to the parsnip trick you talked about, but we use Cauliflower rather then parsnips.

How about a test between root vegetables cooked in already boiling water vs cold and brought to boiling. To save time, I usually cook potatoes like pasta. While the water comes up to a boil, I'm washing and chopping the potatoes, while I've got a pan of butter blanching onions and garlic, and it's all done about the same time. Throw the drained spuds and butter concoction together, mash, add milk/cream, whisk and season, sorted

Putting herbs, spices and a lot of other things into mash is timesaver. When I make food that doesn't really work with sauce (I don't like turning my mash into potato soup on plate) I'll put many things into the mash instead. I lived in Germany for a while and I was amazed with their love for instant-mash -cups. My favorites were diced (smoked, cooked & dried) bacon -mash and jalapeno -mash. I don't really do mash from fresh potatos but instant mash is cheap & keeps for years in storage, or when I buy perishable ingredients (especially fresh fish), I'll grab a bag of frozen potato flakes, corn, mixed vegetables etc. to keep the temperature sensitive ingredients cool in my backbag. One thing to suggest for salad dressing is that a fine sprinkle of hot chili powder or whirl of shiraca before serving works really well. Especially during summer when I'm too lazy to cook and kitchen is too hot anyway, I'll just make a salad every day... same dressing gets bit boring over time so dash of hot sauce is nice different. Also recent "discovery" I've made is that because I want to keep some sliced meat product to put on a bread, chicken/turkey is cheap and makes a good ingredient for salad. Don't need to prep by having fried chicken day before.

I'm with Jamie; greens on flatbread is fine, salad is delicious, but a mountain of lettuce does not go on top of any type of pizza.

Tip for Jamie: if you cut all the mushrooms in half it'll present as 3 pieces of mushrooms (or however small you cut them), instead of 1 whole mushroom and a half piece

“But you are left with skins”. No, my friend, you are not LEFT with skins. You are given a golden opportunity to dress those up and pop them back in the air fryer for potato skin chips (or crisps) to snack on later or crush over the mash for extra texture and flavor. It’s definitely one of my favorite snacks to make since getting an air fryer (tho I always end up snacking on them while doing other stuff and they never make it onto the mash😩)

It would be interesting to see an actual normals vs chefs challenge on this - i.e add on that the normals also get a bag of groceries for the chefs, and do the same format in reverse.

Remember everyone: any air fryer recipe can be done in a traditional oven with very little adjustment. It'll take a little more time because the food is farther from the heating element and won't have as much forced air (non-convection will have more time added than convection). Air fryers are just small electric convection ovens, with the pros and cons that come with the increased proximity to the heating element and the greater influence of the fan due to proximity and size.

This is what the normals have forgotten. How to pick teams for a playground game. round 1 pick a hero ingredient round 2 (in reverse order) pick a support player round 3 (and beyond) round out the 3 dishes. planning 1 dish, planning dish 2 and then having dish 3 be whats left is what gets you guys into trouble every time.
