Ingredients for Chicken Afghani Kebab:
(Tsp-Teaspoon; Tbsp-Tablespoon)
- Chicken Drumsticks (legs) - 6 (approx. 450-500 gms)
Almond-Chilli Paste:
- Soaked & peeled almonds- 16-18
- Green Chilli-1- 2 nos
- Water-3 tbsp
For the Marination:
- Hung Curd- 5 tbsp (gross wt. 350-400 gms)
- Almond-Chilli paste- 4 tbsp (made earlier)
- Ginger Garlic paste- 2 tsp (heaped)
- Salt-1.25 tsp
- Fresh Cream- 2 tbsp
- Turmeric powder-1/2 tsp
- Black pepper powder-1/2 tsp
- Garam Masala Powder- 3/4 tsp
- Kasuri Methi powder- 1 tsp (dry roasted & powdered)
- Refined oil- 2 tbsp
Other Ingredients:
- Butter, for basting(melted) - 2-3 tbsp
Preparation:
- To prepare the hung curd, strain the water from the curd or plain yogurt using a strainer or cloth to have a thick curd without any water. This may take 1.5 to 2 hrs, so plan accordingly.
- Wash and pat dry the whole Chicken Legs/drumsticks
- Now make 2 slits on the thick portion of the chicken drumsticks.
- For the marinade, add all the ingredients in a bowl. Mix it well with a whisk or spoon and add all the chicken drumsticks. Make sure the drumsticks are fully coated with the marinade.
- Set aside to marinate for 3 hours in the refrigerator. Take out the marinated chicken from the refrigerator 30 mins before placing in the oven.
Process:
- Preheat the oven/OTG to 250 degrees C for 10 mins.
- Arrange the marinated chicken legs on a metal rack.
- Slide in the rack/tray in the top slot of the oven.
- In an OTG, turn on both the upper and lower heating elements and convection fan if available.
- Roast for 10 mins at 250 degrees C. After 10 mins flip the chicken.
- Roast for another 10 mins at 250 degrees C on the other side.
- Flip the chicken legs and baste with melted butter.
- Reduce the oven temperature to 200 degrees C.
- Roast for 7-8 mins at 200 degrees C. Flip the chicken and continue basting with melted butter.
- Finally roast for another 6-7 mins at 200 degrees. Remove the tray once the edges of the chicken are lightly charred.
- Serve as an appetizer.
