RECIPE
2 Lb Chicken Breast, Diced
1 Lb Bacon, Diced
1 Cup Sharp Cheddar
(optional) 1 Oz Pork Rinds, Crushed
SAUCE
3/4 tsp Dried Dill
1/2 tsp Dried Chives
1/4 tsp Granulated Onion
1/2 tsp Granulated Garlic
3/4 tsp Salt
1/8 tsp Black Pepper
1 Cup Heavy Cream
1) Place a pan over medium high heat. Add your bacon and cook until your desired doneness. Remove the bacon and reserve the grease in the pan.
2) Add your chicken in batches to get a good sear on each piece. Once all of the chicken has been seared, set aside and discard your bacon grease.
3) Place your pan on medium heat with the fond still attached to the bottom. Pour the heavy cream into the pan and begin to scrape with a spatula to release the fond. Add all of your spices and let reduce until it coats the bacon of a spoon.
4) Get a baking dish (or if your pan is oven safe) and add your chicken and bacon back in along with 3/4 of your cheese. Mix everything to incorporate. Top this with your remaining cheese and the optional crushed pork rinds. Place this into your oven at 350°F for 10-12 minutes or until golden brown. Let cool for 5-10 minutes and serve.
