Here's a delicious chicken biryani recipe you can try:
1. *Ingredients for chicken masala:*
1 kg chicken cut into medium pieces)
7 medium tomatoes
5 medium onion
3 large potatoes
3 Tbspoon yogurt
1.5 tbsp ginger-garlic paste
1.5 Tbspoon red crushed chili
1 tbspoon Pisa dhania
Badiyan 3 phool large size
Jaifal 1 quarter
Jawitri 2 bara lacha
Salt to taste
2 tbsp lime or lemon juice
2. *Cook the Chicken:*
- Heat 1 cup oil or ghee in a large pan.
- Add the sliced onions and fry until golden brown. Set it aside
- Add chicken and fry turn's golden
- add 1 Tbspoon biryani masala to add flavor to chicken and fry
- Add the ginger-garlic paste and cook for 2-3 minutes until the raw smell disappears.
- Add the chopped tomatoes, crushed red chili, coriander powder, jaifal Jawitri badiyan powder and salt. Cook until the tomatoes turn soft and the oil separates.
- Cover and cook on medium heat until the chicken is fully cooked (around 15-20 minutes).
- Stir in the yogurt , half of the fried onions,
- Add the potatoes and stir well to coat with the spices.
Cook for another 2 minutes.
- Biryani Masala is done for layering
For the Rice
1 kg rice (soaked in water for 30 minutes)
3-4 cloves
2 bay leaf
2 cinnamon stick
2-3 green cardamoms
Mint leaves coriander fresh green chillies
3. *Prepare the Rice:*
- In a large pot, good amount of water add cloves, bay leaf, cinnamon, cardamom, and salt. Mint leaves, Corian and chill
- Add the soaked rice and cook until it’s 80 to 90 % cooked (grains should be firm).
- Drain the water and set the rice aside.
4. *Layer the Biryani:*
- In a heavy-bottomed pot, start by adding a layer of the semi-cooked rice on top, followed by some fried onions, fresh coriander, and mint.
- Add layer of the cooked chicken mixture.
- Repeat the layering process until all the chicken and rice are used, finishing with a layer of rice.
5. *Dum Cooking:*
- Drizzle the food color on top and sprinkle home made jaifal Jawitri masala.
- Add kewra teaspoon mix with little water
- 2 spoon oil (serving
- Cover the pot with a tight lid or seal with foil to trap the steam.
- Place on low heat for 20-25 minutes to allow the flavors to blend (you can place a tawa/griddle under the pot to avoid burning the bottom layer).
6. *Serve:*
- Gently fluff the rice before serving.
