INGREDIENTS
¾ kilo chicken breast fillet (sliced)
¼ cup flour
½ teaspoon rosemary (optional)
Salt and pepper to taste
3 tablespoons butter
2 tablespoons olive oil
1 medium onion (chopped)
5 cloves of garlic (minced)
1 can (115 g) mushroom (drained)
¼ cup white wine (optional)
1 pack (250 ml) all purpose cream
DIRECTIONS
Prepare the chicken cuts and put them in a bowl. Season with salt, pepper, garlic powder and rosemary. Mix until well combined.
Add flour into the chicken and mix until well coated.
Melt some butter in a pan. Add a spoon of any cooking oil. Add the coated chicken into the pan and lightly sear using medium to high heat. Flip to cook the other side. Once the crusts are seared, remove them from the pan.
In the same pan, add some oil. Add the onions and garlic. Saute for a few minutes (do not let the onions turn brown). Add the mushrooms and saute a bit. Season with salt and pepper. Saute for 2 minutes.
Add the seared chicken back to the pan. Next, add the white wine (optional). Once the aroma of the white wine evaporates, add the all purpose cream. Stir gently until all chicken is coated with the sauce. Cover the pan and let it simmer for 1 - 2 minutes.
Add some fresh parsley. Stir and let it cook for a minute. Then, turn the heat off.
Transfer the chicken in mushroom sauce to a serving dish. Serve this with hot steaming rice. Enjoy!
