You might know this already, but "chow mein" literally means "stir fried noodles." So of course if you look for a recipe, you will find noodles. For some strange reason, American-Chinese restaurants in some parts of USA started calling this thing "chow mein", and it was served with those funny crunchy fried noodle things sold by the La Choy company in like the 1950s. Those crunchy things are supposed to be the noodles! In this video, she calls it "chow mein" for the non-Chinese, but her Chinese title literally translates as "chicken stir fried with cabbage." So the dish you are looking for is "chicken (or whatever meat) stir fried with cabbage". You just got lucky that she chose to make the odd "translation" :)

I've had chow mein back in 1996 all the way to 2009 and it has always been stir fried noodles across the board. Now starting In 2010 and forward, it has become a mixture of chop suey. I am sitting here this instant destroying a platter of this cabbage/celery/onion/chicken loveliness. This is one of the best Chinese-American dishes ever invented. It is comfort food of the highest order. I begged my mother to try this dish for the last decade of her life, but she never would. I should have just bought some and taken it to her house. If she had tried it, she would have gone NUTS over it! Fried cabbage was right up her alley anyway, and if she had tried the velveted chicken and the chicken gravy, which gathered cabbage juice as it soaked down into the fried rice, she would have shouted out loud. Some people are just set in their ways.

It seems right up your alley for this channel, healthy and delicious. (Perhaps it has a more common name in Chinese...?) It seems to translate to "Steamed Chicken with Northern Mushroom". They do appear to be shiitake mushrooms but they are quite large and almost black in color, perhaps due to the rehydration process...? Would love to see how this is made!
