From the northern hemisphere, I normally do oxtail for my first winter potjie but I reckon that will be my first attempt this year, also like how your pot is in the fire and not suspended. Nice one boet!

By using a potjie pot on a wood fire do you get a smoky flavor to any of your recipes? If so, is is faint, obvious or outstanding? would the selection of firewood determine the outcome of the potjiekos?👍

Not at all. Wouldn’t make a difference as the lid would be on most of the time. So you could even use gas if it is easier. Only difference would be the bragging rights using wood as its more difficult.

Great post brother and I am blown away that the process only took an hour in total. Wow. A real taste adventure no doubt. Something I need to do because I have focussing only on Red Meat. I reacently won a potjiekos comp at an aviation event with Oxtail too. 🤣👍 what many people dont understand is that oxtail is one of your longest and most difficult as you can miss the mark so easily. Thank you. Its hot. We love the hot curries. I have a video out that explains this. its a chicken curry bunny chow and here are the ingredients that we used to make the spice - 1 Tbs Jeera 1 Tbs Kasmiri Chilli (To be added if you want a hot curry) 2 Tbs Durbs curry powder (any curry powder will do) 1 Tbs Soomph powder 1 Tbs Dhania powder 1 Tbs Tumeric powder 1 Tbs Garum powder Salt and Pepper to taste 1 Tbs Mustard seed Bay Leaves Cinnamon sticks Garlic (cruched)
