Chicken curry recipe
Ingredients:
1 small onion, roughly chopped
3 cloves garlic, peeled
1/4 inch ginger, peeled and chopped
A few curry leaves
2 tsp cumin powder
3 tsp water
1 Chill
Instructions:
Prepare the Ingredients:
Roughly chop the onion.
Peel the garlic cloves.
Peel and chop the ginger.
Wash the curry leaves.
Blend the Ingredients:
Place the chopped onion, garlic, Chilli, ginger, and curry leaves in a blender or food processor.
Add the cumin powder.
Add the 3 teaspoons of water to help with blending.
Blend to a Paste:
Blend the ingredients until a smooth paste forms.
For the Curry:
1 large onion, finely chopped
3 cloves garlic, minced
A few curry leaves
1 green chili
1200g chicken, cut into pieces
1 cup thick coconut milk
3 cups thin coconut milk
1 tsp coriander powder
1 tsp black pepper powder
1/2 tsp cinnamon cardamom powder
1/2 tsp turmeric powder
1 tbsp curry powder
Salt to taste
2 tbsp oil (vegetable or coconut oil)
Instructions:
Heat 2 tbsp of oil in a large pan over medium heat.
Add the finely chopped onion, minced garlic, curry leaves, and slit green chili. Sauté until the onions turn golden brown.
Spice it Up:
Add the coriander powder, black pepper powder, cinnamon cardamom powder, turmeric powder, and curry powder to the pan. Stir well to coat the onions and release the flavors of the spices.
Add Thin Coconut Milk:
Pour in the 3 cups of thin coconut milk.
Add the chicken pieces to the pan. Stir well to combine.
Cover the pan and let it cook for about 25-30 minutes, or until the chicken is cooked through and tender.
Add the Cumin Paste:
Once the chicken is cooked, add the prepared cumin paste to the pan. Stir well and let it cook for another 2 minutes to allow the flavors to meld together.
Finish with Thick Coconut Milk:
Add the thick coconut milk to the pan. Stir well and let it cook for another 1 minutes without covering.
